Cauliflower steaks get a bad reputation — mostly because people undercook them and they end up watery and sad. Done right, at high heat with a glaze that’s actually got some flavor, they’re one of the more satisfying things you can make in a toaster oven on a Tuesday night. This version uses harissa and honey, which sounds like a lot but it’s really just sweet heat, and the combination does something almost sticky and jammy against the caramelized cauliflower that I find genuinely hard to stop eating.
The chickpeas aren’t decoration. They roast at the same time on the same pan and get genuinely crispy — little crunchy pops against the tender steak. You do need a toaster oven baking sheet that fits your machine without touching the walls; that airflow matters for getting the chickpeas right instead of steamed. I use a quarter sheet pan in mine and it’s perfect.
The herb sauce takes maybe three minutes. Parsley, cilantro if you’re into it, lemon, garlic, olive oil — blitzed or even just whisked vigorously if you don’t want to drag out the blender. It’s the thing that keeps the dish from feeling heavy, and honestly I’d put it on almost anything. A small immersion blender makes it stupidly fast.
This feeds two people as a main. If you need four servings, you’d have to roast in two batches — one pan won’t hold four steaks without crowding, and crowding is how you end up with the sad watery version I mentioned at the start.
Toaster Oven Crispy Honey Harissa Roasted Cauliflower Steaks with Chickpeas and Green Herb Sauce
Thick cauliflower steaks brushed with a sweet-spicy honey harissa glaze, roasted alongside crispy chickpeas until deeply caramelized, then finished with a bright lemony herb sauce. It's a proper dinner — not a side dish.

Prep and Roast

Preheat your toaster oven to 425°F. Let it fully preheat — this matters for getting good color on the cauliflower.

Pat the chickpeas really dry with a paper towel. Wet chickpeas steam instead of crisp. Spread them on one side of your toaster oven baking sheet, toss with 1 tablespoon olive oil, salt, and pepper.

Mix the harissa, honey, 1 tablespoon olive oil, cumin, and grated garlic together in a small bowl.

Brush both sides of the cauliflower steaks with the remaining 1 tablespoon plain olive oil, then place them on the other side of the pan. Season lightly with salt.

Roast for 12 minutes. The chickpeas should be starting to shrivel a bit and the cauliflower will have some color on the bottom.

Flip the cauliflower steaks. Brush the top side generously with the harissa glaze — use most of it. Give the chickpeas a shake. Roast another 14-16 minutes until the cauliflower is deeply golden and a little charred at the edges and the chickpeas are crispy. Watch the glaze; if it starts looking very dark at the 10-minute mark, loosely tent just the cauliflower with a small piece of foil.

While everything roasts, blend or whisk together all the herb sauce ingredients until fairly smooth. Taste it — it should be bright and garlicky. Add another squeeze of lemon if it needs it.

Plate the cauliflower steaks, pile chickpeas around them, and spoon the herb sauce over everything. Eat immediately.
Notes
Cutting the steaks: Slice from the top of the cauliflower straight down through the core — the core is what holds the steak together. The outer florets will tumble off and that's fine; throw them on the pan with the chickpeas.
Harissa brands vary a lot in heat. Mina is mild and sweet. DEA is spicier. Taste yours before making the glaze so you know what you're working with.
The green herb sauce keeps in the fridge for 2 days. It'll turn darker in color but still tastes great.
If you want to make this more substantial, serve it over a scoop of plain couscous or warmed flatbread.
