I’ve made a lot of sheet pan dinners, and this one gets requested more than almost anything else I test. There’s something about honey mustard that just works on roasted potatoes — the honey caramelizes against the hot pan, the mustard keeps it from being cloying, and the whole thing comes out with these slightly sticky, deeply golden edges that are hard to stop picking at.

The chickpeas are what make it a real meal instead of just a side dish. When they’re dried properly and given enough heat, they go almost nut-like in texture. Not fully crispy the way oven-roasted chickpeas can get, but firm and satisfying with a little chew. That contrast with the softer potato is genuinely good. I add feta and dill at the end, totally off the heat, so the feta stays in distinct crumbles rather than melting into the glaze.

You’ll want a toaster oven baking sheet that fits your oven well — this is one of those recipes where a tray that’s too small means everything steams instead of roasts. If you’re still cooking this in a cramped or older unit, it might be worth upgrading to a toaster oven with convection, which makes a real difference on high-heat roasting like this.

One honest note: this recipe is best eaten right off the tray. The chickpeas hold up okay the next day if you reheat them, but the texture is noticeably better fresh. I’ve eaten it standing at the counter directly from the foil. No regrets.

  1. Preheat your toaster oven to 425°F on the bake or convection bake setting. Line the toaster oven tray with foil and give it a quick spray of oil or a light brush — this matters a lot for getting things to release cleanly.

  2. In a large bowl, whisk together the olive oil, Dijon, honey, garlic powder, smoked paprika, salt, and pepper. Add the halved potatoes and pat-dried chickpeas. Toss everything until it's really well coated. Don't rush this step.

  3. Spread the mixture in a single layer on the prepared tray. The chickpeas and potatoes should have some breathing room — crowding kills the crispiness. Cut sides of the potatoes should face down.

  4. Roast for 20 minutes. Pull the tray, flip the potatoes and give the chickpeas a quick stir, then roast another 6-8 minutes until the potatoes are golden at the edges and the chickpeas have tightened up and gone a bit crunchy.

  5. Remove from the oven. While still hot, squeeze the lemon juice over everything, then scatter the crumbled feta and fresh dill on top. Serve immediately straight from the tray.

Notes

Drying the chickpeas is non-negotiable if you want any crunch out of them — I usually spread them on a paper towel while I'm prepping everything else. Whole grain Dijon gives little bursts of mustard seed texture that I really like here, but smooth Dijon works fine too. If your toaster oven runs hot (many do), check at 18 minutes instead of 20. Leftovers reheat well at 400°F for about 7 minutes, though the chickpeas soften overnight so eat them fresh if you can. This is filling enough as a main for two hungry people, or a solid side for four.
