Toaster Oven Crispy Kimchi and Cheddar Quesadillas with Sesame Dipping Sauce

Crispy, cheesy, and just a little funky from the kimchi — these toaster oven quesadillas are fast, satisfying, and way more interesting than plain cheese
Jump to Recipe

I started making these after a weeknight where I had half a jar of kimchi, a block of cheddar, and absolutely no desire to cook a real meal. Kimchi and cheese sounds like it shouldn’t work, but it completely does — the kimchi gets a little caramelized and almost savory-sweet when it hits the heat, and sharp cheddar has enough personality to hold its own against it. This is one of those things I’ve made probably thirty times since and it still surprises me how good it is.

The toaster oven is genuinely perfect for this. You get even heat on both sides (once you flip), and the broil-adjacent temps you get at 425°F mean the tortilla actually crisps up rather than just going limp and sad. I use a toaster oven baking sheet with a dark surface — it picks up more heat and helps the bottom of the quesadilla get properly golden without needing any extra oil. If yours is light-colored, add 1-2 minutes to the first bake.

The dipping sauce is technically optional but I’d encourage you not to skip it. It takes two minutes and adds this tangy, slightly spicy contrast that makes the whole thing feel more like a complete meal and less like a snack. If you keep it mild (no gochugaru), it’s totally kid-friendly too. My nephew, who claims to hate anything “weird,” ate an entire one.

You don’t need a fancy setup for this — just a reliable toaster oven that can hit 425°F and hold it. Preheat it properly, drain your kimchi well, and you’re most of the way there.

Toaster oven quesadillas stuffed with tangy kimchi and sharp cheddar, broiled until golden and blistered, served with a quick sesame soy dipping sauce. Ready in under 20 minutes and honestly better than anything you'd make in a pan.

Sesame Dipping Sauce

Instructions

  1. Preheat your toaster oven to 425°F on the bake or convection bake setting. If yours runs cool (many do), give it a full 10 minutes to come up to temperature.

  2. Stir together all the dipping sauce ingredients in a small bowl and set aside. It comes together fast and gets better as it sits.

  3. Drain your kimchi really well — press it between a few paper towels if it's especially wet. Too much liquid is the main reason quesadillas turn out soggy instead of crispy.

  4. Mix the neutral oil and sesame oil together, then lightly brush one side of each tortilla with the mixture. This is what gives the outside that golden, slightly crispy finish.

  5. Lay one tortilla oil-side-down on your toaster oven baking pan or tray. Scatter half the cheddar over one half of the tortilla, then top with the kimchi and green onions. Add the rest of the cheese over that, fold the tortilla in half, and press down gently.

  6. Repeat with the second tortilla. You should be able to fit both on the tray, though how crowded it gets depends on your machine.

  7. Bake for 7 minutes, then flip carefully using a spatula. Bake another 3-4 minutes until both sides are golden brown with some darker spots and the cheese is fully melted.

  8. Let them rest for 1-2 minutes before cutting — this is important, skipping it means molten cheese everywhere. Cut into wedges and serve immediately with the dipping sauce.

Notes

Drain the kimchi well — can't say this enough. Soggy kimchi = soggy quesadilla. If your toaster oven has a convection fan, use it; it makes a real difference on the crispiness. Freshly shredded cheddar melts much better than pre-shredded (which has anti-caking coating that makes it kind of grainy). You can add a smear of cream cheese before the cheddar for something richer — it holds everything together and balances the kimchi's tang nicely. Leftovers reheat well at 375°F for about 4 minutes.
