Sheet pan salmon is one of those weeknight things that sounds impressive but is actually almost embarrassingly easy. Twenty minutes, one pan, and dinner is done. I’ve made versions of this in a full-size oven plenty of times, but honestly the toaster oven version works just as well — better, actually, because it heats up faster and the smaller cavity keeps things a little hotter and more concentrated around the fish.

The trick is using skin-on fillets and a hot pan. You’re not flipping the salmon; you just let it go skin-side down the whole time. The tomatoes burst and get sweet and a little caramelized around the edges, the asparagus softens but keeps some bite, and the garlic slices toast up golden in the oil. If you don’t already have a toaster oven baking sheet that fits your machine, it’s worth picking one up — foil directly on the rack works in a pinch but a proper pan gives you much better heat distribution and keeps the juices from dripping.

The seasoning here is simple on purpose: lemon zest, oregano, smoked paprika. That combination with salmon is one I keep coming back to. It’s got enough going on without needing much else. Fresh parsley at the end brightens everything up and the lemon slices roasting alongside the fish add a slightly bitter, caramelized citrus note that I really like — they’re optional, technically, but I always include them.

This comes together in under 30 minutes start to finish, which means it’s realistic on a Tuesday.   1. Preheat your toaster oven to 400°F. If yours runs a little cool (mine does), give it a full 10 minutes to come up to temp.

  2. Line your toaster oven baking pan with foil and drizzle about 1 tablespoon of olive oil across it. Spread the asparagus and cherry tomatoes on the pan, scatter the sliced garlic over everything, and season with 1/4 teaspoon of the salt and a few cracks of pepper. Toss gently to coat.

  3. Push the vegetables to the sides to make two clear spaces in the center for your salmon. Pat the fillets dry — this really does matter for getting a decent crust — then place them skin-side down in those gaps.

  4. Mix the remaining 2 tablespoons of olive oil with the lemon zest, oregano, smoked paprika, and the remaining 1/2 teaspoon salt. Spoon that mixture over the top of each fillet and rub it in lightly. Lay a couple of lemon slices on top of the vegetables.

  5. Roast at 400°F for 16–18 minutes. You're looking for the salmon to flake easily when pressed with a fork and for the tomatoes to have burst and gone a little jammy. If your fillets are thinner than an inch, check at 14 minutes.

  6. Squeeze a bit of fresh lemon juice over the whole pan, scatter the parsley on top, and serve right from the pan. That's it.

Notes

Skin-on fillets hold together better during roasting and the skin gets slightly crispy against the foil — I'd skip skinless here. If your toaster oven is smaller (like a 4-slice), you might need to do the salmon and vegetables in two batches, or just pile the asparagus in tighter; it still works. Leftovers keep in the fridge for up to 2 days and are honestly great cold, flaked over a salad. Don't skip patting the salmon dry — wet fish steams instead of roasting and you lose all that nice edge.
