So here’s the thing about cooking salmon in a toaster oven: it actually works better than a full-size oven in a lot of cases. The smaller cavity heats up faster and more evenly, so the fish doesn’t dry out waiting for the temperature to stabilize. I started doing this on weeknights when I couldn’t be bothered to heat up the big oven for two fillets, and now it’s just how I make salmon. If you’ve got a toaster oven with a proper bake setting, you’re already most of the way there.
The lemon herb butter is the part people always ask about. It’s not complicated — just softened butter, lemon zest, parsley, and dill — but it melts over the hot fish right when it comes out of the oven and makes everything taste a little more intentional than it actually is. The dill is non-negotiable in my opinion. It does something to salmon that nothing else quite replicates.
The green beans cook on the same pan at the same temperature, which is convenient. They get a little blistered and garlicky on the edges, and honestly that’s the best way to eat green beans. Use a good toaster oven baking sheet with a low rim so the beans can roast rather than steam — that’s where a lot of people go wrong.
This recipe is for two servings, which is exactly right for a toaster oven pan. Scaling up means crowding the pan, and crowding means steaming. If you’re feeding four, just run two batches or use a second pan on the rack below and rotate halfway through.
Toaster Oven Crispy Lemon Herb Roasted Salmon with Garlic Butter Green Beans
Flaky, golden salmon fillets roasted alongside tender-crisp green beans, all finished with a punchy lemon-herb butter. One pan, one meal, done in under 25 minutes.
Ingredients
Salmon and Green Beans
Lemon Herb Butter
Instructions
Prep
-
Preheat your toaster oven to 400°F on the bake setting. Line the toaster oven pan with foil and give it a light coat of oil — this matters more than people think, salmon skin likes to stick.
-
In a small bowl, mash together the butter, lemon zest, parsley, dill, and red pepper flakes. Set it aside. It doesn't need to be pretty.
-
Toss the green beans with 1 tablespoon olive oil, the minced garlic, half the salt, and half the pepper. Spread them in a single layer on one side of the pan.
Season and Roast
-
Pat the salmon fillets dry with a paper towel — this step actually makes the difference between a nice sear and sad steamed fish. Rub the tops and sides with the remaining tablespoon of olive oil, then season with the remaining salt, pepper, smoked paprika, and thyme.
-
Place the salmon skin-side down on the other side of the pan, next to the green beans. Slide the whole thing into the toaster oven.
-
Roast at 400°F for 14 to 18 minutes. Thinner fillets (under 3/4 inch) are usually done at 14. You're looking for the fish to flake easily when you press it with a fork at the thickest part. The green beans should have some char on them by now — that's good.
Finish
-
Pull the pan out and immediately drop a spoonful of the herb butter onto each fillet. It'll melt fast. Let everything sit for 2 minutes before serving — salmon is dramatically better if you give it a moment.
-
Serve with lemon slices on the side. That's it.
Notes
Salmon thickness varies a lot depending on where you buy it. Grocery store fillets tend to be thinner than fish market ones, so check at 13 minutes just in case. If your toaster oven runs hot (many do), drop to 390°F. The herb butter can be made up to 3 days ahead and kept in the fridge — it's also excellent on toast the next morning, not that I'd admit that to anyone.
