Toaster Oven Crispy Lemon Pepper Roasted Broccoli and Cheddar Stuffed Baked Potatoes

These toaster oven stuffed baked potatoes are loaded with crispy lemon-pepper broccoli and melted cheddar, and they're genuinely better than you'd expect from such a small appliance

I make these probably once a week in the colder months, which feels like a lot until you actually eat one. There’s something about a properly baked potato that the toaster oven handles surprisingly well — better than the microwave, obviously, and honestly better than my full-size oven since it runs hotter and crisps the skin faster. The filling is simple: sharp cheddar, a bit of butter and sour cream mashed into the fluffy interior, and a pile of lemon-pepper roasted broccoli that gets dark and a little caramelized at the edges. That broccoli is the part people ask about.

The whole thing comes together in under an hour, and most of that is just the potato sitting in the oven while you do something else. You’ll want a small rimmed toaster oven baking sheet for the broccoli — a flat sheet lets the oil run off and the florets steam instead of roast, which is exactly what you don’t want. A quarter-sheet pan is the right size for most toaster ovens.

If you’re not sure your toaster oven holds temperature accurately (a lot of them run 25 degrees hot or cold), it’s worth using an oven thermometer. I learned this the hard way after wondering why everything seemed to cook unevenly. A decent reliable toaster oven with a convection setting will cut the broccoli time down to about 10 minutes, just so you know.

This is the kind of meal that feels more substantial than it sounds on paper. Two potatoes, fully loaded, is legitimately dinner for two people — not a side dish situation. Go with fresh-shredded cheddar if you can. The pre-shredded bags have a coating on them that makes the melt a little waxy, and this dish deserves better than waxy cheese.

Instructions

Bake the Potatoes

  1. Preheat your toaster oven to 400°F on the bake setting. Rub each potato all over with olive oil and sprinkle with kosher salt — don't skip this, the skin gets genuinely good.

  2. Place the potatoes directly on the toaster oven rack or on a small baking sheet. Bake for 45 to 55 minutes, until a fork slides in without any resistance in the center. Smaller potatoes will be closer to 45 minutes; bigger ones need the full time.

  3. When they're done, pull them out and let them sit for 5 minutes. Don't rush this — the steam inside finishes the job.

Roast the Broccoli

  1. While the potatoes finish their last 15 minutes or so, toss the broccoli florets with olive oil, lemon pepper, garlic powder, and salt on a small rimmed baking sheet. Spread them out — crowding kills the crispiness.

  2. Slide the broccoli into the toaster oven alongside the potatoes (if there's room) or right after you pull the potatoes out. Roast at 400°F for 12 to 15 minutes until the edges are dark and a little crispy. Those browned tips are the whole point.

Stuff and Finish

  1. Cut each potato open lengthwise and press the ends toward each other to open it up. Add a tablespoon of butter and let it melt for a minute.

  2. Mash the inside flesh a bit with a fork, then stir in 1.5 tbsp of sour cream per potato and a pinch of black pepper.

  3. Pile half the roasted broccoli into each potato, then top with shredded cheddar. Put them back in the toaster oven for 3 to 4 minutes until the cheese is melted and bubbling at the edges.

  4. Finish with a tiny squeeze of fresh lemon juice over the broccoli, a dollop of extra sour cream, and a scatter of chives. Eat immediately.

Notes

Potato size really matters here — medium russets (about 8 oz each) fit best in most toaster ovens and cook more evenly. If your toaster oven runs hot, check at 40 minutes. You can also microwave the potatoes for 5 minutes first to cut the toaster oven time down to about 25 minutes, but the skin won't be quite as good. Leftover roasted broccoli reheats great the next day at 375°F for 5 minutes — still crispy. For a sharper flavor, pepper jack works beautifully in place of cheddar.
