I started making this because I had two zucchini sitting on my counter that were exactly one day from going sad, and a container of ricotta I’d opened for something else. Not exactly a planned recipe. But it came out so good that I’ve made it on purpose at least six times since.

The idea is simple: roast the zucchini until it actually gets some color on it (not just soft and pale), spread lemony whipped ricotta on flatbread, pile the zucchini on top, and toast the whole thing in the toaster oven until the edges go crispy. Fresh mint at the end is non-negotiable in my opinion. It sounds fussy but it takes maybe two minutes and it completely changes the flavor. If you’ve got a decent toaster oven baking pan with low sides, the zucchini will roast properly instead of just sitting there getting mushy.

Toaster ovens are genuinely great for flatbreads. The smaller cavity means the heat surrounds the bread more efficiently than a big conventional oven, and you get those crispy edges without drying out the center. I use a countertop toaster oven that fits two standard naans side by side — you might need to do batches depending on yours, but each one only takes about 8 minutes so it’s not a big deal.

This works as a weeknight dinner with a simple salad, or as a thing you bring out when people come over and you don’t want to fuss with much. The components are all made-ahead friendly too, which helps.

Roast the Zucchini

  1. Preheat your toaster oven to 425°F on the bake setting. If yours runs a little cool, bump it to 430°F — most toaster ovens do.

  2. Toss the zucchini rounds with 2 tablespoons olive oil, salt, pepper, and the red pepper flakes if you're using them. Spread them in a single layer on your toaster oven baking pan. Overlap nothing. Crowded zucchini steams instead of roasting and goes totally limp.

  3. Roast for 12–14 minutes, flipping halfway, until the edges are golden and the centers are tender. Pull them out and set aside. They'll look slightly shrunk — that's perfect.

Make the Lemon Ricotta

  1. While the zucchini roasts, stir together the ricotta, lemon zest, lemon juice, garlic, Parmesan, salt, and pepper in a small bowl. Taste it. If it needs more lemon, add it. It should be bright and a little sharp.

Assemble and Bake

  1. Brush the flatbreads lightly with olive oil on both sides. Working in batches if needed (most toaster ovens fit two at a time comfortably), place them directly on the rack or pan.

  2. Spread a generous layer of the lemon ricotta over each flatbread, leaving about a half inch border at the edges. Arrange the roasted zucchini on top, overlapping slightly is fine here.

  3. Bake at 425°F for 7–9 minutes, until the edges of the flatbread are crispy and the ricotta has puffed just slightly in spots.

  4. Pull them out. Immediately scatter torn mint leaves and toasted pine nuts over the top. Hit each one with a small squeeze of lemon juice and a pinch of flaky sea salt. Serve right away — these do not improve with sitting around.

Notes

Zucchini gives off a lot of moisture, so don't skip the single-layer step. If your flatbreads are thick naan, they may need the full 9 minutes; thin lavash-style flatbreads only need about 6. The ricotta mixture can be made up to two days ahead and kept covered in the fridge. Mint is really the move here — basil works in a pinch but it's a different flatbread. For a little more richness, drizzle a teaspoon of good olive oil over the finished flatbreads before serving.
