Toaster Oven Crispy Miso Butter Roasted Cabbage Steaks with Sesame and Scallions

These miso butter cabbage steaks roast into something deeply savory and caramelized — a surprisingly satisfying weeknight dinner that takes almost no effort
Jump to Recipe

Cabbage steaks weren’t something I thought about much until I had way too much cabbage from a CSA box and a toaster oven that needed to earn its keep. Turns out that thick-cut green cabbage, when you roast it hot and fast with the right glaze, gets these dark, almost lacy edges that are genuinely addictive. The miso butter does a lot of the heavy lifting here — the miso caramelizes against the hot pan, the butter keeps everything rich, and the honey just barely tips it toward sweet without being cloying.

You’ll need a toaster oven that can hit 425°F reliably for this to work well. Some older or cheaper units struggle to get there and hold steady, which means your cabbage steams instead of roasts. The difference is pretty dramatic. I’d also suggest having a toaster oven baking pan with low sides rather than a deep dish — airflow matters, and you want that heat hitting the surface of the cabbage directly.

The whole thing takes under 35 minutes start to finish, which is not nothing on a weeknight. I’ve made this for dinner with just some rice on the side, and I’ve also served it as a side dish next to roasted tofu. Either way works. It’s one of those recipes where the output feels like it should’ve taken more effort than it actually did.

Thick cabbage slabs brushed with a savory miso butter glaze, roasted in the toaster oven until the edges go crispy and caramelized. Ready in about 30 minutes and honestly better than you'd expect cabbage to be.

Instructions

  1. Preheat your toaster oven to 425°F with the rack in the middle position. Line your toaster oven pan with foil — miso burns and sticks, and you'll thank yourself later.

  2. Mix the softened butter, miso paste, olive oil, soy sauce, honey, garlic powder, and pepper together in a small bowl until it's a smooth, uniform paste. It smells amazing at this point.

  3. Slice the cabbage straight through the core into 4 slabs about 1 inch thick. Keep the core intact on each piece — that's what holds them together on the pan.

  4. Lay the cabbage steaks flat on the foil-lined pan. Brush the miso butter generously over the tops and sides of each one. Don't be shy here.

  5. Roast for 15 minutes. The edges should be starting to brown and the butter will be bubbling. Carefully flip each slab and brush any remaining miso butter onto the new top side.

  6. Roast another 8 to 10 minutes. You want the edges going dark and genuinely crispy — not soft and pale. If your toaster oven runs cool, give it an extra few minutes.

  7. Pull them out and immediately drizzle with sesame oil and rice vinegar if using. Scatter scallions and sesame seeds on top. Eat right away while the edges are still crisp.

Notes

The core is your friend — don't cut it out or the slab falls apart on the pan. White miso is milder than red; if you only have red miso, use a little less. These don't reheat especially well (the crispiness is a one-time thing), so I'd plan to eat them fresh. If you want to make it a full meal, serve alongside steamed rice or tuck a fried egg on top. A sprinkle of red pepper flakes at the end is never a bad idea.
