Most people have never roasted a radish. They see them at the farmers market, buy a bunch, eat a few with butter and salt, and then forget about the rest until they go soft in the back of the fridge. That used to be me. Then I tried roasting them and honestly it changed how I think about that whole vegetable.
At high heat, radishes lose their sharpness and turn sweet and almost potato-like — still a little peppery, but mellowed out and jammy at the edges. Paired with caramelized carrots and a savory-sweet miso butter glaze, they become something genuinely worth making on purpose. The whole thing comes together in about 30 minutes in a reliable toaster oven without heating up your whole kitchen.
The herbed labneh underneath sounds fancy but it’s really just stirring a few things together. The contrast of warm, sticky vegetables against the cool, creamy labneh is what makes this recipe click. I’ve brought this to dinner parties as a side and people always ask what it is. “Roasted radishes” gets a very confused look every time.
You’ll want a toaster oven baking pan with a little depth so the glaze doesn’t drip onto the heating element — a standard quarter sheet pan fits most full-size toaster ovens perfectly. Keep the vegetables in a single layer, get that initial roast going before the miso butter hits the pan, and you’re set.

Prep and Roast

Preheat your toaster oven to 425°F on the bake or roast setting. Line the toaster oven baking pan with foil — cleanup is so much easier.

Toss the halved radishes and carrot pieces with 2 tbsp olive oil and a pinch of salt directly on the pan. Spread them out so nothing is crowded. They'll steam instead of roast if they're piled up.

Roast for 12 minutes without touching them. You want some good color on the cut sides.

While the vegetables roast, whisk together the melted butter, miso paste, honey, rice vinegar, and garlic in a small bowl until smooth.

Pull the pan out after 12 minutes. Spoon the miso butter over the vegetables and toss gently using tongs. Return to the oven and roast another 8-10 minutes, until the edges are caramelized and the glaze is sticky. The radishes should be tender all the way through — poke one with a fork if you're not sure.
Make the Labneh and Assemble

Stir together the labneh, dill, chives, lemon zest, and a good pinch of salt. Taste it. It should be bright and herby. Add a little more lemon zest if it feels flat.

Spread the herbed labneh across a serving plate or shallow bowl — use the back of a spoon and make a swoosh. It doesn't have to be perfect.

Pile the warm roasted vegetables right on top of the labneh. Drizzle with the remaining tablespoon of olive oil, scatter over the parsley, flaky salt, and sesame seeds if you're using them. Serve immediately.
Notes
Radishes are the surprise here — most people expect them raw and sharp, but roasting makes them mild and almost sweet. Don't skip the initial 12 minutes before adding the miso butter; it needs to go on after some color has developed or the honey in the glaze can scorch before the carrots are done. Labneh is worth tracking down (most Middle Eastern grocery stores carry it), but full-fat Greek yogurt strained for an hour in a cheesecloth works fine. Leftovers reheat reasonably well in the toaster oven at 375°F for about 5 minutes — keep the labneh separate and add it cold.
