Panzanella is one of those recipes that sounds fancy but is really just a smart way to use up stale bread. The traditional Tuscan version is all about ripe tomatoes and soaked bread, which is delicious — but I wanted something with a little more going on, something that could actually hold its own as a full meal. So I started adding crispy roasted chickpeas, and I haven’t looked back.

The whole thing comes together in a toaster oven, which is why I love it for summer. No heating up the whole kitchen, no babysitting a big oven. A toaster oven with a convection setting will get you the crispiest chickpeas with the least effort, but a regular toaster oven works fine too — just give them an extra couple of minutes.

The vinaigrette is sharp and lemony, which is exactly what you need to stand up to all the bread and beans. Kalamata olives add a briny hit, the cucumber keeps things fresh, and the herbs — don’t skip the fresh parsley and basil, seriously — make it taste like something you’d order at a restaurant. You’ll want a proper toaster oven baking sheet that fits your machine so the bread toasts evenly rather than steaming.

It’s a great weeknight lunch or light dinner. Works as a side for a crowd too, if you double it — just use your biggest bowl for tossing.

Instructions

Toast the chickpeas and bread

  1. Preheat your toaster oven to 400°F. If you have a convection setting, use it — it makes a real difference for getting the chickpeas properly crispy.

  2. Pat the chickpeas completely dry. This is the most important step. Spread them on a small toaster oven baking sheet and toss with 1 1/2 tablespoons of the olive oil, smoked paprika, garlic powder, and a good pinch of sea salt.

  3. Toss the torn bread chunks with the remaining 1 1/2 tablespoons olive oil and a pinch of salt in a bowl, then spread them on a second small baking sheet (or push the chickpeas to one side if your pan is big enough).

  4. Roast at 400°F for 15 to 18 minutes, shaking the chickpea pan once halfway through. Pull the bread out when it's golden and crunchy — usually around 10 to 12 minutes. The chickpeas need the full time to get crisp.

Make the vinaigrette

  1. Whisk together the olive oil, lemon juice, Dijon, garlic, honey, salt, and pepper in a small bowl. Taste it — you want it a little sharp since the bread will soak some of it up.

Assemble

  1. Add the cherry tomatoes, cucumber, red onion, olives, parsley, and basil to a large bowl.

  2. Add the warm croutons and pour about two-thirds of the vinaigrette over everything. Toss well, then taste and add more dressing if you want.

  3. Let it sit for about 5 minutes so the bread absorbs a little dressing without going completely soggy. Add the crispy chickpeas right before serving so they keep some crunch.

Notes

Day-old bread is honestly better here than fresh — it gets crispier and holds up to the dressing longer. If you only have one small baking sheet, do the bread first, pull it out, then roast the chickpeas. They need a bit more time anyway. The salad is best eaten the same day, but if you're prepping ahead, store the chickpeas and croutons separately and toss everything together right before eating. I've also added a handful of crumbled feta right at the end and it's very good.
