Toaster Oven Crispy Olive Oil and Sea Salt Roasted Chickpea Pita Pizzas with Roasted Red Pepper and Fresh Herbs

These toaster oven pita pizzas get crispy bottoms, jammy roasted peppers, and golden chickpeas that make a ridiculously good weeknight meal in under 30 minutes

I made these for the first time because I had one sad can of chickpeas, a jar of roasted red peppers that had been in the fridge too long, and zero interest in making actual pizza dough. Wasn’t expecting much. Thirty minutes later I was genuinely annoyed I’d never done this before.

The chickpeas are the part you don’t want to skip. They roast up golden and a little crunchy, and when you put them on top of melted cheese while everything’s still hot, they stay crisp just long enough for dinner. Soft chickpeas on pizza are pointless. Crispy ones are completely different. A toaster oven baking sheet with a low rim is what I use — it lets the heat circulate without the chickpeas rolling off everywhere.

Pita makes a surprisingly good pizza base in a toaster oven. It’s thin enough to crisp all the way through in under 10 minutes, which is something you genuinely can’t pull off with thick bread or a raw dough. The garlic rub sounds fussy but it’s literally 10 seconds of work and you’ll taste the difference. If you’ve got a toaster oven that runs hot — and a lot of them do — check these at 6 minutes. Some of mine have come out nearly burnt at 8. If you’re not sure about your toaster oven’s quirks yet, an oven thermometer is worth the few dollars.

This is the kind of thing that works for a quick solo lunch or feeds a small group if you bake in batches. Scale it however you need. It’s also very easy to customize — swap the roasted red pepper for thin-sliced zucchini, add olives, use feta instead of mozzarella. The basic method stays the same.

Crispy flatbread pizzas topped with roasted red peppers, golden chickpeas, and fresh herbs — built entirely in a toaster oven in about 30 minutes. Fast, satisfying, and way better than it sounds on paper.

Instructions

Roast the Chickpeas

  1. Preheat your toaster oven to 425°F on the bake or convection bake setting. If yours has convection, use it — it makes a real difference for getting the chickpeas properly crispy.

  2. Pat the chickpeas as dry as you can with a clean kitchen towel. I usually let them sit on the towel for a few minutes while the oven heats. The drier they are, the crispier they get.

  3. Toss the chickpeas with 1.5 tbsp olive oil, the smoked paprika, garlic powder, and sea salt on the toaster oven tray. Spread them out in a single layer — don't crowd them.

  4. Roast for 12-15 minutes, shaking the pan once halfway through, until they're golden and starting to look a little wrinkled. They'll crisp up more as they cool. Set aside.

Build and Bake the Pitas

  1. Brush each pita with olive oil on both sides. Rub the cut side of the garlic clove across the top of each one — it takes about 5 seconds per pita and adds a lot.

  2. Place two pitas at a time on the tray (or all four if your toaster oven fits them). Top each with a few strips of roasted red pepper, torn mozzarella, and a sprinkle of red pepper flakes and oregano.

  3. Bake at 425°F for 6-8 minutes, until the cheese is bubbling and the pita edges are visibly crispy and starting to brown. Keep an eye on them after the 6-minute mark — toaster ovens vary a lot.

  4. Pull them out and immediately scatter the roasted chickpeas on top, then finish with fresh basil and a pinch of flaky salt. Eat right away. They don't really hold — the pitas soften as they sit.

Notes

The most important thing is drying the chickpeas well before roasting. Wet chickpeas steam instead of crisping, and they'll just be sad and soft on top of your pizza. If you want to skip the mozzarella entirely, a crumble of feta works great and keeps this fully pareve (just leave off the cheese for a vegan version — still delicious). Pocket pita works but it puffs up funny; regular flatbread-style pita is my preference here. Leftovers exist technically, but honestly the toasted pita gets leathery after a couple hours. Make what you'll eat.
