These spiced paneer skewers come out of the toaster oven with real char and smoky edges — no grill, no fuss, just seriously good results in under 30 minutes

Paneer tikka is one of those things I always assumed needed a tandoor or at least a proper grill to taste right. Turns out that’s not true at all. A toaster oven cranked up to broil gets surprisingly close — the paneer blisters at the edges, the yogurt marinade caramelizes, and the whole thing smells aggressively good in about twenty minutes.

The marinade does most of the work here. Yogurt tenderizes and helps the spices stick; the garam masala and smoked paprika give you that warm, slightly smoky depth you’d normally get from a wood fire. I’ve made this probably a dozen times and I still think the key moment is leaving the marinade alone for at least ten minutes, ideally longer. Even a quick soak makes a difference.

For equipment, all you really need is a toaster oven baking pan and some skewers. If you want to level things up, a toaster oven with a strong broil function makes a noticeable difference in how much color you get on the paneer — but honestly, most standard models will do the job fine.

The mint chutney takes maybe three minutes to blend and it makes everything better. Don’t skip it. It’s sharp and herby and cuts right through the richness of the paneer.

Mint Chutney

Instructions

Marinate the Paneer

  1. In a large bowl, whisk together the yogurt, oil, garam masala, cumin, smoked paprika, turmeric, salt, ginger, garlic, lemon juice, and cayenne until smooth.

  2. Add the paneer cubes, bell pepper, onion, and zucchini. Toss gently until everything is coated. Let it sit for at least 10 minutes at room temperature — longer if you have time (up to a few hours in the fridge works great).

Make the Mint Chutney

  1. Blend the mint, cilantro, green chili, yogurt, lemon juice, salt, garlic, and water together until smooth. It should be bright green and punchy. Taste it — add more lemon or salt if it needs it. Set aside in a small bowl.

Assemble and Cook

  1. Preheat your toaster oven to broil (or 450°F if your model doesn't have a dedicated broil setting). Let it heat for at least 5 minutes.

  2. Thread the marinated paneer and vegetables onto skewers, alternating between paneer, pepper, onion, and zucchini. If you're using wooden skewers, soak them in water for 10 minutes first so they don't scorch.

  3. Place the skewers on a toaster oven baking pan or the wire rack set over the pan. Don't crowd them. Broil for 8–10 minutes, then flip carefully and broil another 6–8 minutes. You're looking for real char spots on the paneer — not just pale golden, but actual dark-edged pieces.

  4. Pull them out when the edges look properly blistered. Let them rest for a minute or two before serving.

Serve

  1. Slide everything off the skewers onto a plate and spoon mint chutney generously over the top. Serve with warm flatbread or rice, with extra chutney on the side.

Notes

If your toaster oven runs hot under broil (some do), keep an eye on things after the 7-minute mark. The char is good; full blackening is not. Full-fat paneer holds up much better here than reduced-fat — the low-fat kind tends to crumble when you thread it. Fresh paneer from an Indian grocery is noticeably better than the shrink-wrapped supermarket blocks, if you have access to it. The chutney keeps in the fridge for 2 days but loses its bright green color fast — it still tastes good, just looks a bit sad.
