Galettes have been my lazy-impressive dinner for years. They look like you put in a lot of effort, but the whole thing — crust and all — is genuinely forgiving. This one came together one night when I had a zucchini, a handful of cherry tomatoes threatening to go soft, and zero desire to heat up a full oven. Toaster oven, 400°F, done.

The key move here is the herbed ricotta layer under the vegetables. It keeps everything creamy and cohesive without the galette becoming a soggy mess. The Parmesan on top crisps up in the last few minutes of baking into these little crunchy bits that are honestly the best part. If you’re making this regularly, a toaster oven baking sheet that fits your machine is worth having — the right fit means better air circulation and more even browning on the crust.

This works in pretty much any countertop toaster oven that fits a standard baking sheet. I’ve made it in a Breville and a much cheaper Cuisinart and it came out great both times — just keep an eye on the crust color after 22 minutes since every machine runs a little different. If the edges are browning too fast, loosely tent with foil for the last few minutes.

One more thing: don’t stress about the crust shape. A jagged, uneven edge looks rustic and intentional. That’s galette culture.

Make the Crust

  1. Whisk the flour and salt together in a medium bowl. Add the cold butter cubes and work them in with your fingertips until the mixture looks like coarse, uneven crumbs — some pea-sized butter chunks are totally fine, actually preferable.

  2. Drizzle in ice water one tablespoon at a time, mixing with a fork until the dough just comes together when you pinch it. Don't overwork it. Shape into a flat disk, wrap in plastic wrap or a reusable bag, and stick it in the freezer for 10 minutes while you prep the filling.

Prep the Filling

  1. Stir together the ricotta, half the Parmesan, the garlic, thyme, lemon juice, salt, and pepper in a small bowl until combined. Taste it — it should be savory and bright. Adjust salt if needed.

  2. Pat the zucchini slices dry with a paper towel. This step matters. Wet zucchini will steam instead of roast and you'll end up with a soggy bottom, which nobody wants.

Assemble and Bake

  1. Preheat your toaster oven to 400°F on the bake setting. Line the toaster oven tray with parchment paper.

  2. On a lightly floured surface, roll the chilled dough into a rough circle about 10-11 inches across. It doesn't need to be perfect — ragged edges are the whole point of a galette. Transfer it to your prepared baking sheet.

  3. Spread the ricotta mixture over the dough, leaving a 1.5-inch border all around. Arrange the zucchini rounds in overlapping circles on top, then scatter the cherry tomatoes over everything cut-side up. Drizzle with olive oil and sprinkle on the remaining Parmesan.

  4. Fold the edges of the dough up and over the filling, pleating as you go. Press gently to help the folds hold. Brush the crust with the beaten egg.

  5. Bake at 400°F for 25-28 minutes, until the crust is deep golden brown and the tomatoes have collapsed and started to caramelize at the edges. Let it sit for 5 minutes before slicing. Finish with flaky salt and extra thyme if you have it.

Notes

Cold butter is non-negotiable for a flaky crust — if your kitchen is warm, pop the flour in the freezer for 5 minutes too. Zucchini releases a lot of water, so patting it dry really does make a difference. Leftover galette keeps in the fridge for 2 days; reheat in the toaster oven at 350°F for about 8 minutes to crisp the crust back up. You can swap the zucchini for thinly sliced yellow squash, or use a mix. A store-bought pie crust round works if you're short on time — no shame in that at all.
