Zucchini gets a bad reputation for being watery and boring, and honestly, most of the time it deserves it. But these rounds are different. The combination of Parmesan and panko forms a crust that actually stays crunchy — not just for the first bite, but for the whole plate. I made these for the first time on a weeknight when I had two zucchini sitting around getting soft, and they disappeared embarrassingly fast.
The toaster oven is genuinely the right tool here. A full oven takes forever to preheat for a small batch, and a skillet means babysitting. With a reliable toaster oven set to 425°F, you get consistent dry heat that crisps the coating without steaming the zucchini underneath. Convection mode if you have it — I’ll keep saying this until I’m blue in the face because it genuinely makes a difference.
The lemon herb yogurt sauce isn’t optional in my opinion. Greek yogurt instead of mayo or sour cream keeps it lighter and adds a little tang that plays really well against the salty Parmesan crust. Fresh chives and parsley are what I usually have on hand — dill would also be excellent here if that’s your thing. Make the sauce first and stick it in the fridge while you prep everything else; five minutes in there and the flavors actually come together properly.
You’ll want a toaster oven baking sheet that fits your machine well — enough surface area to lay the rounds out in a single layer matters a lot here. Crowded rounds steam each other. One layer, a little breathing room, and you’re good.
Toaster Oven Crispy Parmesan-Crusted Zucchini Rounds with Lemon Herb Dipping Sauce
Thin zucchini rounds coated in seasoned Parmesan breadcrumbs and roasted until genuinely crispy — way better than anything fried, and done in under 30 minutes.
Ingredients
Zucchini Rounds
Lemon Herb Dipping Sauce
Instructions
Make the Dipping Sauce
-
Stir together the Greek yogurt, lemon juice, lemon zest, chives, parsley, garlic, salt, and pepper in a small bowl. Taste it. Adjust lemon or salt as needed — it should be bright and a little punchy. Cover and refrigerate while you do the zucchini.
Prep the Zucchini
-
Preheat your toaster oven to 425°F on the bake or convection bake setting. Line your pan with parchment or foil — this matters, otherwise half your crust stays stuck to the pan.
-
In a shallow bowl, mix together the panko, Parmesan, garlic powder, smoked paprika, oregano, salt, and pepper. In a separate bowl, beat the egg.
-
Dip each zucchini round in the egg, let the excess drip off, then press it firmly into the breadcrumb mixture on both sides. Actually press — don't just wave it near the crumbs. Set each one on your prepared pan in a single layer with a little space between them.
-
Drizzle or lightly brush a little olive oil over the tops. This is what gets you the golden color instead of pale, sad rounds.
Cook
-
Roast for 10 minutes, then flip each round carefully with a thin spatula. Roast another 8 to 10 minutes until the tops are deep golden and the coating is visibly crispy. If you've got a convection setting, use it — it speeds things up and the crunch is noticeably better.
-
Pull them out and let them sit for 2 minutes. Straight-from-the-oven steam makes everything soft. Give them just a moment. Then serve with the dipping sauce on the side.
Notes
Don't skip patting the zucchini dry before you start — if there's surface moisture on the slices, the coating won't stick properly and you'll get steaming instead of crisping. A quick press with a paper towel does the job. Also, ¼-inch is really the sweet spot for thickness; thinner than that and they cook too fast before the coating browns, thicker and the zucchini turns mushy before the crust crisps. If your toaster oven runs hot (mine does), check at the 8-minute mark after the flip. These are best eaten right away, honestly.
