Some mornings you don’t want to wash a skillet. You just want breakfast, and you want it fast. This hash started as a lazy Saturday thing for me — I had potatoes, half an onion, and eggs, and I didn’t feel like standing over a stove. Turns out the toaster oven does the heavy lifting better than I expected. The potatoes actually get crispier in there than they do in a pan most of the time, because the heat circulates all the way around instead of just hitting the bottom.

The whole thing takes about half an hour start to finish, and most of that is hands-off time. You toss everything together, slide it into a reliable toaster oven, set a timer, and go make coffee. No hovering, no stirring every two minutes. Just crispy potatoes and eggs that cook right on top of the hash like a little miracle.

I use smoked paprika every single time. It gives the potatoes this faintly smoky, almost meaty flavor that makes the whole thing taste like it took way more effort than it did. The red bell pepper softens and sweetens up as it roasts, and the onion gets these little caramelized edges. It’s a genuinely good combination. A sturdy toaster oven baking sheet with a rim is the one thing you really do need here — you want something that fits your oven without leaving a huge gap on the sides, so the heat stays even.

This feeds two people pretty comfortably, or one very hungry person. Scale it up if your toaster oven has the room, though you might need a couple extra minutes on the potato roasting time.

  1. Preheat your toaster oven to 425°F on the bake setting. Let it come fully up to temp — this is what gets the potatoes crispy instead of sad and steamed.

  2. In a medium bowl, toss the diced potatoes, onion, and bell pepper with the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Make sure everything is well coated.

  3. Spread the mixture in a single layer on a toaster oven baking pan or any small rimmed baking sheet that fits your oven. Don't pile them up. Crowding kills crispiness.

  4. Roast for 15 minutes, then pull the pan out and give everything a good stir with a spatula. Get under the potatoes — some of them will be starting to brown on the bottom and that's exactly what you want.

  5. Push the hash toward the edges of the pan to create two small wells in the center. Crack one egg into each well. Season the eggs lightly with salt and pepper.

  6. Return the pan to the toaster oven and bake for another 6 to 8 minutes, depending on how set you like your yolks. Six minutes gives you a runny yolk; 8 minutes is mostly set. I pull mine at 7.

  7. Scatter the chives or parsley over everything and add the red pepper flakes if you're using them. Eat straight from the pan if you want — fewer dishes.

Notes

Yukon Golds work best here because they hold their shape and get those crispy edges. Russets get a bit fluffy inside which isn't bad, just different. If your toaster oven runs hot, check the potatoes at 12 minutes instead of 15. You can absolutely add a handful of frozen corn or some sliced mushrooms to the veg mix — just don't overload the pan or things will steam. Leftovers reheat fine at 375°F for about 8 minutes, though the eggs will firm up more. Fresh eggs are always better for this.
