This bowl came together on a weeknight when I had half a head of broccoli, some soba noodles, and zero interest in doing anything complicated. Fifteen-ish minutes in the toaster oven and the broccoli comes out blistered at the edges — way better than what you’d get from steaming it. The sesame sauce takes maybe three minutes to whisk together. That’s basically it.

If you don’t already have a toaster oven baking sheet that fits your specific machine, get one. It makes this kind of high-heat roasting so much easier — stuff doesn’t slide around and you get better browning because the pan preheats with the oven. Worth the five dollars.

The tahini-soy sauce is punchy and a little nutty and honestly I could eat it on cardboard. Ginger, garlic, a hit of rice vinegar, and a small spoonful of chili garlic sauce if you like heat. The jammy egg on top isn’t strictly necessary, but it makes the bowl feel like an actual meal instead of a side dish. Seven minutes in boiling water is the exact time — I’ve tested it obsessively.

This works in a countertop toaster oven of basically any size. If your oven is on the smaller side, roast the broccoli in two batches rather than crowding the pan. Crowding = steaming. You want real heat contact on those florets.

Roast the Broccoli

  1. Preheat your toaster oven to 425°F on the bake or roast setting. Give it a full 5 minutes to heat up — it makes a real difference for getting the edges properly crispy.

  2. Toss the broccoli florets with olive oil, salt, and pepper right on your toaster oven baking sheet. Spread them out so nothing is overlapping.

  3. Roast for 14 to 16 minutes, flipping once around the 9-minute mark. You want the edges dark and a little charred. Pull them early and you'll get steamed-tasting broccoli, which nobody wants.

Cook the Eggs

  1. Bring a small pot of water to a full boil. Gently lower the eggs in and cook for exactly 7 minutes for a jammy, slightly soft yolk. Transfer immediately to ice water and let them sit for at least 3 minutes before peeling.

Make the Sauce and Noodles

  1. Cook the noodles according to the package directions. Drain and rinse under cold water.

  2. Whisk together the soy sauce, tahini, sesame oil, rice vinegar, honey, ginger, garlic, and chili garlic sauce in a medium bowl. Add the warm water a little at a time until the sauce is pourable and coats a spoon nicely. Taste it — adjust with more vinegar if it needs brightness or more soy if it needs salt.

  3. Add the drained noodles to the sauce and toss until every strand is coated. Let them sit for a minute while you assemble everything.

Assemble

  1. Divide the noodles between two bowls. Pile the roasted broccoli on top. Halve the eggs and nestle them in, cut side up. Scatter the scallions, cucumber slices, and sesame seeds over everything. Eat right away.

Notes

Soba noodles are my first choice here because they have a slight earthiness that plays really well with the tahini sauce, but regular lo mein or even spaghetti works in a pinch. The sauce can be made up to 3 days ahead — keep it in the fridge and thin with a splash of warm water before using. If your toaster oven runs hot (mine runs about 15 degrees hot), check the broccoli at 12 minutes. Leftovers store well for lunch the next day, though the noodles will absorb more sauce overnight, so add a tiny drizzle of sesame oil before eating.
