Toaster Oven Crispy Sesame Soy Roasted Green Beans and Soft-Boiled Egg Rice Bowls

These toaster oven sesame soy roasted green beans come out blistered and sticky, served over rice with a jammy egg for a genuinely satisfying weeknight bowl
Jump to Recipe

I make this bowl probably twice a week in the colder months, which tells you something. It started as a way to use up a bag of green beans that was getting a little sad in the fridge, and now it’s a full-on regular. The idea is simple: a soy-honey glaze that caramelizes onto the beans in the toaster oven’s dry heat, some jammy eggs, rice, done. Takes maybe 30 minutes total if you’re not rushing.

The toaster oven is genuinely better than a full-size oven for this. The small space means the heat surrounds the beans more aggressively, and you get real blistering without having to wait for a big oven to preheat. If you’re working with a good toaster oven baking pan that conducts heat well, the undersides of the beans actually brown, which adds a lot. A flimsy tray mostly just steams things.

The glaze has a little ginger and rice vinegar in it, which keeps it from being one-note sweet. Garlic goes in too, though fair warning — minced garlic at 425°F will get quite dark by the end. I like it. If you don’t want that, grate it in instead; it distributes more evenly and blends into the glaze rather than sitting in little pieces. The eggs are the kind of thing that makes the whole bowl feel like a real meal rather than a side dish. Seven minutes in boiling water gets you a yolk that’s set but still a little soft in the center. That’s the target.

If you’ve been using your toaster oven mostly for toast and reheating leftovers, something like this is a good reminder of what a reliable countertop toaster oven can actually do. High heat, small space, fast results. That’s the whole appeal.

Instructions

Get the Eggs Going First

  1. Bring a small saucepan of water to a boil. Lower the eggs in gently and cook for exactly 7 minutes for a jammy, slightly-soft yolk. Transfer immediately to an ice bath and let them sit while you do everything else.

  2. If you don't have an ice bath handy, cold tap water works fine — just run it long enough to stop the cooking.

Roast the Green Beans

  1. Preheat your toaster oven to 425°F on the bake setting. If yours runs hot, 415°F is fine.

  2. In a medium bowl, whisk together the soy sauce, sesame oil, honey, neutral oil, garlic, ginger, and rice vinegar. Add the green beans and toss really well — you want every bean coated.

  3. Spread the beans in a single layer on your toaster oven baking pan. Don't pile them up. Crowded beans steam instead of blister, and that defeats the whole point.

  4. Roast for 18 to 22 minutes, flipping once around the 12-minute mark. You're looking for some dark, slightly charred spots and edges that have tightened up and gone a bit wrinkly. That's what you want.

Assemble

  1. Peel and halve the eggs. Divide the rice between two bowls.

  2. Pile the hot green beans over the rice. Lay the eggs on top, sprinkle with sesame seeds and scallions, and finish with chili oil if you're using it. Eat immediately.

Notes

Rice: Leftover rice from the fridge works great here — just microwave it with a splash of water before serving. Gluten-free swap: Use tamari instead of soy sauce. If your green beans are on the thinner side, check at 16 minutes — they can go from perfect to too-dark fast. The chili oil isn't strictly necessary but I never skip it. Any brand works; I use a store-bought crispy chili oil that has little bits in it. Leftovers: The beans keep fine in the fridge for a day or two and reheat well under the toaster oven broiler for 3-4 minutes.
