This bowl came about because I had half an eggplant going soft in the fridge and a bag of green lentils that had been staring at me for weeks. Not a glamorous origin story. But the result — eggplant roasted hard and fast in the toaster oven with sumac and cumin until the edges go almost crispy-dark, piled over earthy lentils with cold tahini drizzled over the top — is genuinely one of my favorite things to eat right now.
The sumac is doing a lot of heavy lifting in this recipe. If you haven’t cooked with it much, it’s a dark reddish spice with a tart, lemony flavor that works incredibly well on roasted vegetables. It gives the eggplant a brightness that keeps the whole bowl from feeling heavy. You can find it at most grocery stores now, or online. I keep a jar next to the cumin.
For this one you’ll want a toaster oven baking sheet that actually fits your machine — sounds obvious, but I’ve ruined more than one roasting situation by grabbing a pan that’s half an inch too wide and having to cram the eggplant in. A proper fit means better air circulation and crispier edges. If you’re in the market for a new machine, a convection toaster oven makes a real difference here — that moving hot air is what takes roasted eggplant from soft and slightly sad to properly caramelized.
The lentils cook on the stovetop while the eggplant roasts, so the whole thing is on the table in about 35 minutes. Leftovers hold up well the next day too, which I can’t say for every bowl-style recipe.
Toaster Oven Crispy Sumac Roasted Eggplant and Lentil Bowls with Tahini and Pomegranate

Cook the Lentils

Combine the lentils, water or broth, diced onion, garlic, cumin, and salt in a small saucepan. Bring to a boil, then reduce to a simmer and cook uncovered for 20-25 minutes, until the lentils are tender but not mushy. You can do this while the eggplant roasts. Drain any excess liquid and keep warm.
Roast the Eggplant

Preheat your toaster oven to 425°F on the bake or convection bake setting. If you have convection, use it — it makes a real difference for getting the eggplant edges crispy rather than steamed.

Toss the eggplant cubes in a bowl with the olive oil, sumac, cumin, smoked paprika, salt, and pepper. Make sure every piece is coated. Eggplant soaks up oil fast, so don't skimp here.

Spread the eggplant in a single layer on your toaster oven pan or a small rimmed baking sheet that fits your machine. Crowding is the enemy — if they're piled up, they'll steam instead of roast. Use two batches if your pan is small.

Roast for 20-25 minutes, flipping once at the 12-minute mark, until the pieces are deep golden brown and the edges have a bit of char. They should look a little dramatic. That's what you want.
Make the Tahini Sauce

Whisk together the tahini, lemon juice, grated garlic, and salt. It'll seize up and look thick and pasty at first — that's normal. Add cold water one tablespoon at a time, whisking until it loosens into a pourable, creamy drizzle. Taste it. It should be nutty, garlicky, and bright.
Assemble

Divide the warm lentils among four bowls. Pile the crispy roasted eggplant on top. Drizzle tahini sauce generously over everything — don't be shy. Scatter the pomegranate seeds, parsley, and pine nuts over each bowl. Finish with a small pinch of sumac for color and a little extra tang. Serve immediately, with warm pita on the side if you want.

Eggplant tip: if your eggplant seems particularly bitter or watery, salt the cubes and let them sit in a colander for 20 minutes before cooking, then pat dry. Honestly though, most modern eggplant doesn't need this — I skip it half the time. The lentils can be cooked a day ahead and refrigerated; just reheat with a splash of water. Tahini sauce keeps in the fridge for up to a week, though it thickens overnight — just thin it again with a little water. If you can't find pomegranate seeds, dried cranberries work fine and cost about a third of the price.
