I made this for the first time on a Wednesday when I had two eggplants that needed to be used up and basically nothing else planned for dinner. It looked fancier than it had any right to, and my partner asked if I’d been cooking all afternoon. Nope. Maybe 35 minutes total, mostly hands-off while the toaster oven did its thing.

The move here is the tahini-honey glaze, which gets brushed on halfway through roasting so it has time to caramelize without burning. Eggplant has this tendency to just… go soft and sad if you’re not careful, but slicing it thick, patting it dry, and roasting it hot gives you rounds with actual texture — golden and a little sticky on the outside, creamy in the middle. The herbed labneh underneath is cooling and garlicky and cuts through the richness of the tahini perfectly. Pomegranate seeds sound a little precious but they add a pop of tartness that genuinely makes the whole thing.

For this recipe, a toaster oven with a convection setting is your best friend — the circulating air is what gets you that caramelized exterior instead of a soggy one. I use a dark, rimmed toaster oven baking sheet because it conducts heat better than a lighter pan and the eggplant actually browns on the bottom instead of just steaming.

This works as a light main with some warm flatbread or pita on the side, or as a really substantial vegetarian starter. I’ve also piled leftovers (the eggplant, not the labneh) over farro the next day and it was excellent.

Prep the Eggplant

  1. Lay your eggplant rounds out on a clean kitchen towel or paper towels. Sprinkle both sides with the kosher salt and let them sit for about 10 minutes. This pulls out some moisture so they roast up instead of steam. Pat them dry before you do anything else.

  2. Preheat your toaster oven to 425°F on the convection roast setting if you have it. If not, regular bake at 425°F is fine — just add a couple extra minutes at the end.

  3. In a small bowl, whisk together the tahini, honey, lemon juice, smoked paprika, and a tablespoon of the olive oil. It'll look a little thick. That's what you want.

  4. Brush both sides of the eggplant rounds with the remaining 2 tablespoons of plain olive oil and arrange them in a single layer on your toaster oven baking pan. Don't crowd them — work in two batches if you need to.

Roast

  1. Roast the eggplant at 425°F for 15 minutes, flip each round, then brush the tops generously with the tahini-honey glaze. Roast for another 8 to 10 minutes until the glaze is caramelized, slightly sticky, and the edges of the eggplant are deeply golden. Keep an eye on it after the 8-minute mark — the honey in the glaze can catch fast.

  2. Pull them out and let them rest for a minute or two while you get the labneh together.

Make the Herbed Labneh

  1. Stir together the labneh, grated garlic, mint, parsley, olive oil, and salt in a small bowl. Taste it. It should be bright and garlicky. Adjust salt if needed.

Assemble

  1. Spread the herbed labneh across a serving platter or individual plates. Arrange the roasted eggplant rounds on top — overlapping them slightly looks nice but honestly just piling them works too.

  2. Scatter over the pomegranate seeds and pine nuts if using. Drizzle with the thinned tahini (just whisk a teaspoon or two of water into your tahini until it flows easily). Finish with a pinch of flaky salt. Serve right away while the eggplant is still warm.

Notes

Labneh vs. Greek yogurt: labneh is thicker and tangier and honestly worth seeking out at any Middle Eastern grocery store or Whole Foods. Greek yogurt works in a pinch but drain it for 20 minutes in a cheesecloth first or the topping will be too loose. Eggplant size matters: globe eggplant works best here, not the long thin Japanese variety — you want substantial rounds that hold up to the glaze. Make-ahead option: the herbed labneh keeps in the fridge for 3 days. Roast the eggplant fresh though — it doesn't reheat well once it's been glazed. The whole dish is naturally gluten-free and vegan if you swap the honey for maple syrup.
