I started making these on a weeknight when I had half a bag of red lentils and a sad bunch of carrots that needed using up. That’s pretty much the whole origin story. What came out of my toaster oven was way better than expected — crispy-edged little patties with this warm, cumin-forward flavor that made the kitchen smell incredible. I’ve made them probably a dozen times since.

The toaster oven is genuinely ideal for this. High, direct heat from above and below gets you a real crust without any stovetop splattering, and you can walk away. If you’re regularly cooking vegetables, grains, and things like this, a toaster oven with convection speeds things up even more — convection mode at 425°F cuts a few minutes off and gives you a more even browning all around. That said, the standard bake setting works great too.

The yogurt tahini sauce is the part I’m probably most attached to. It’s tangy, slightly nutty, takes three minutes to make, and it genuinely makes the whole dish. A pinch of sumac on top is one of those small things that sounds optional but isn’t, in my opinion. Find it at any Middle Eastern grocery or online — it’s cheap and lasts forever.

For equipment, you just need a toaster oven baking pan, a box grater, and a mixing bowl. That’s it. These work as a main with a salad, as a side dish, or honestly as a snack. They’re one of those things that disappears faster than you expect.

Instructions

Cook the Lentils

  1. Combine the rinsed red lentils with 2 cups of water in a small saucepan. Bring to a boil, reduce the heat, and simmer uncovered for about 8 minutes until they're soft and most of the water is absorbed. They should look a bit mushy — that's exactly what you want. Drain off any excess water, spread them on a plate, and let them cool for 5-10 minutes.

  2. While the lentils cool, grate your carrots and squeeze out as much moisture as you can with your hands or a clean kitchen towel. This step matters. Wet carrots make soggy fritters, and nobody wants that.

Make the Fritter Mixture

  1. Preheat your toaster oven to 425°F and line the baking pan with parchment paper. Brush it lightly with olive oil.

  2. In a large bowl, combine the cooled lentils, squeezed carrots, eggs, flour, garlic, cumin, coriander, smoked paprika, cayenne if using, salt, pepper, and parsley. Mix everything together until it holds its shape when you press a bit between your fingers. If it feels too loose, add another tablespoon of flour.

  3. Scoop the mixture into 8-10 rounds on the prepared pan — a heaping ¼ cup scoop works well. Flatten each one gently to about ½-inch thick with the back of a spoon or your palm. Brush the tops generously with olive oil.

Bake

  1. Bake at 425°F for 12 minutes, then carefully flip each fritter with a thin spatula and bake for another 8-10 minutes until both sides are deep golden and the edges are crispy. They firm up a lot as they cool, so don't panic if they feel a little soft right out of the oven.

Make the Sauce

  1. Whisk together the yogurt, tahini, lemon juice, garlic, water, and salt in a small bowl. Add more water a splash at a time until it's pourable but still thick. Taste it — you might want more lemon or salt. Sprinkle sumac over the top before serving if you have it.

Serve

  1. Pile the fritters on a plate and serve hot with the yogurt tahini sauce alongside. They're great with a simple cucumber salad or just on their own as a snack. Leftovers reheat well at 375°F for 5-6 minutes straight from the fridge.

Notes

Red lentils are the only kind that work here — green or brown lentils won't get soft enough or bind the same way. If your toaster oven runs hot (mine definitely does), check the fritters at the 10-minute mark on the first side. Chickpea flour instead of all-purpose flour gives these a slightly earthier flavor and keeps them gluten-free if that matters to you. The sauce keeps in the fridge for up to 4 days and is honestly great on roasted vegetables, grain bowls, or just swiped on toast.
