Stuffed peppers have a reputation for being a big-pot, long-cook dinner situation, but that’s not really how it has to go. This version comes together fast, uses a toaster oven, and skips the ground meat filling entirely — which, in my opinion, is not a loss. What you’re getting instead is creamy whipped feta, jammy roasted cherry tomatoes, and a layer of garlicky herbed breadcrumbs that get genuinely crispy on top. It’s satisfying in a way that surprises people.

The whipped feta is the real thing happening here. Blending block feta with a little cream cheese and lemon makes it completely different from just crumbled feta — silkier, more spreadable, a little tangy. It holds up under heat without turning rubbery, and it pairs with the sweet roasted peppers in a way that just works. I’ve made this probably a dozen times and it disappears fast every single time.

For this recipe, you’ll want a toaster oven with decent heat distribution — convection mode, if yours has it, speeds up the breadcrumb browning nicely. A toaster oven pan with a small rack insert also helps keep the pepper bottoms from going soft and steamy instead of roasting properly.

This works as a vegetarian main with a simple green salad, or as a side next to roasted fish or chicken. Four halves is a comfortable dinner for two people, or you can stretch it to four as a starter. Either way, it’s a weeknight recipe worth keeping around.

Instructions

Prep

  1. Heat your toaster oven to 425°F on the bake setting. Line the toaster oven pan with foil and set a wire rack on top if you have one — it helps the pepper bottoms cook evenly instead of steaming.

  2. Toss the cherry tomatoes with 1 tbsp of the olive oil, the salt, and pepper right on one side of the foil-lined pan. Spread them cut-side up and leave them alone while you prep everything else. They'll start jamming up nicely once heat hits them.

  3. Brush the pepper halves with the remaining 1 tbsp olive oil — inside and out. Arrange them cut-side up on the pan next to the tomatoes.

Make the whipped feta

  1. Add the feta, cream cheese, lemon juice, grated garlic, and olive oil to a food processor. Blitz for about 90 seconds, scraping down the sides once. It should be really smooth and fluffy — almost spreadable. Taste it. Honestly, it's great on its own and I always steal a spoonful at this point.

  2. Set aside at room temperature while the peppers roast.

First roast

  1. Slide the pan into the toaster oven and roast for 12 minutes. You want the peppers to soften and start taking on a little color at the edges, and the tomatoes to collapse and get slightly caramelized. Pull the pan out.

Stuff and finish

  1. While that's happening, stir together the panko, olive oil, thyme, parsley, garlic, and salt in a small bowl until the breadcrumbs are evenly coated.

  2. Spoon the whipped feta into each pepper half, dividing it evenly. Press a few roasted tomato pieces into the filling of each pepper. Top generously with the herbed breadcrumbs.

  3. Return the pan to the toaster oven and roast another 8 to 10 minutes, until the breadcrumbs are deep golden and the pepper edges are tender with a little char. If your toaster oven has a broil setting, hit it for the last 90 seconds — that's what gets the crumbs properly crunchy rather than just toasted.

  4. Scatter extra fresh parsley over the top and serve right away. They're good warm, but honestly still pretty great at room temperature an hour later.

Notes

Block feta makes a real difference here — the pre-crumbled stuff has anti-caking powder in it and doesn't whip as smoothly. If your toaster oven runs hot (many do), check at the 8-minute mark on the second roast so the breadcrumbs don't burn. Leftovers keep in the fridge for 2 days; reheat at 375°F for about 8 minutes. The whipped feta itself can be made a day ahead and refrigerated — just bring it back to room temp before stuffing so it spreads easily.
