Carrots don’t get enough credit. I know that sounds like something your mom would say, but hear me out — when they roast at high heat and actually get a little charred and sticky, they’re completely different from the sad, limp things that show up as an afterthought on a dinner plate. This recipe started because I had a bunch of carrots I needed to use and about 30 minutes before people came over. Now I make it on purpose.
The za’atar is doing a lot of work here. It’s herby and tangy and goes weirdly well with the natural sweetness of roasted carrots — way better than just salt and pepper, and barely more effort. The cumin adds a little warmth without making it taste like a curry situation. If you have a toaster oven baking sheet with low sides, use it — air circulation matters for getting those caramelized edges.
The tahini drizzle comes together in about two minutes and honestly makes everything taste more finished. It’s the kind of sauce you’ll end up putting on other things too. Pine nuts are my personal preference here over almonds or walnuts because they’re softer and a little buttery, which balances the bright lemon. That said, if you only have slivered almonds, it still works fine.
This is a great side dish but it also holds up on its own over rice or tucked into a wrap. A reliable toaster oven that actually holds temperature makes a real difference — some of the older or cheaper ones run low, so if your carrots aren’t browning by the 15-minute mark, nudge the temperature up 25 degrees.
Toaster Oven Crispy Za’atar Roasted Carrots with Lemon Tahini and Toasted Pine Nuts

Preheat your toaster oven to 425°F. If it has a convection setting, use it — the carrots will brown faster and more evenly.

Toss the sliced carrots with olive oil, za'atar, cumin, salt, and pepper in a bowl until every piece is well coated. Spread them out on a toaster oven baking sheet in a single layer. Don't crowd them or they'll steam instead of roast.

Roast for 20 to 25 minutes, flipping once at the halfway mark. You're looking for deep golden-brown edges and a fork-tender interior. Some dark spots are good — that's where the flavor is.

While the carrots roast, make the tahini drizzle. Whisk together the tahini, lemon juice, olive oil, garlic, and salt. Add cold water one tablespoon at a time until it's thin enough to drizzle easily. It should look a bit like thick cream.

Toast the pine nuts. Just put them in a dry pan over medium heat for 2 to 3 minutes, stirring constantly. They go from raw to burned fast, so don't walk away.

Arrange the roasted carrots on a plate or platter. Drizzle the tahini generously over the top, scatter the pine nuts, and finish with parsley and lemon zest if you're using it. Serve right away.
Notes
Za'atar blends vary a lot by brand — some are heavier on thyme, some on sumac. I like a sumac-forward one here because it adds a subtle tartness that works with the carrots. If yours is very herby and mild, add a small pinch of sumac separately.
The tahini drizzle will thicken as it sits. If you're making it ahead, add a splash more water before serving.
Leftovers keep in the fridge for up to 3 days. Reheat in the toaster oven at 375°F for 5 minutes to bring the edges back to life. Cold from the fridge they're also genuinely good on a grain bowl.
For a heartier meal, serve these over a scoop of hummus or alongside warm pita.
