Prep

  1. Preheat your toaster oven to 425°F on the Bake setting. Line the toaster oven baking pan with foil or parchment paper and lightly grease it with cooking spray or a thin coat of olive oil.

  2. In a small bowl, whisk together the white miso paste, maple syrup, 1 tablespoon olive oil, rice vinegar, grated ginger, garlic, and red pepper flakes (if using) until smooth. Set the glaze aside.

  3. Place the delicata squash rings in a large bowl and toss with 1 tablespoon olive oil and the kosher salt until lightly coated.

Roast

  1. Arrange the squash rings in a single layer on the prepared baking pan, making sure they do not overlap. Roast in the preheated toaster oven for 10 minutes.

  2. Remove the pan from the toaster oven. Using a pastry brush or a spoon, generously brush the top side of each squash ring with the maple miso glaze.

Notes

Delicata squash skin is thin and completely edible — no peeling required, which saves significant prep time. White miso paste is milder and sweeter than red or yellow miso; do not substitute with darker miso or the glaze will be too salty and overpowering. Watch the squash closely in the final few minutes — the maple syrup in the glaze can go from perfectly caramelized to burnt quickly. If your toaster oven runs hot, reduce the temperature to 400°F and add a couple of extra minutes. This dish is vegetarian as written. For a vegan version, omit the feta and drizzle of honey, and add extra pepitas or a handful of toasted walnuts instead.
