Delicata squash doesn’t get nearly enough credit. It’s one of the few winter squashes you don’t have to peel, the skin gets slightly chewy and caramelized in the oven, and the flesh is dense and sweet without being cloying. Paired with a quick honey-garlic glaze and roasted at high heat, it turns into something that genuinely feels worth sitting down for — not just something you made because it was healthy.

This whole bowl comes together in under 40 minutes, most of which is hands-off roasting time. You’ll need a toaster oven baking sheet that fits your machine — the standard quarter-sheet pan works great for most countertop models. If you’ve been using a full-size oven just for sheet pan dinners, honestly you don’t need to. A good countertop toaster oven at 425°F roasts just as effectively and heats up in a fraction of the time.

The farro is what makes this feel like an actual meal rather than a side dish. It’s got a nice chew to it, a little nutty, and holds up well under warm toppings without going mushy. Quinoa works if that’s what you have. The feta and pepitas are not optional in my opinion — the salt from the cheese and the crunch from the seeds are doing real structural work here.

I started making this in October when delicata squash started showing up at my farmers market for a dollar apiece. It became a near-weekly thing. It’s good warm, surprisingly decent at room temperature, and the squash reheats well in the toaster oven the next day.

Instructions

  1. Preheat your toaster oven to 425°F. Line the toaster oven baking pan with foil and give it a quick spray of oil — the honey will stick otherwise and cleanup gets annoying.

  2. In a large bowl, whisk together the olive oil, honey, minced garlic, smoked paprika, salt, and pepper. Add the delicata squash half-moons and toss until every piece is well coated.

  3. Spread the squash in a single layer on the prepared pan. Don't crowd them — overlapping pieces steam instead of roast, and you lose that caramelized edge. If your toaster oven pan is on the small side, do two batches.

  4. Roast for 20-22 minutes, flipping halfway through, until the edges are deep golden and the cut sides look a little sticky and burnished. The thinner pieces will get more color, which is a good thing.

  5. While the squash roasts, toss the pepitas with a teaspoon of olive oil and a pinch of salt in a small oven-safe dish or a piece of foil folded into a little tray. Slide them into the toaster oven for the last 5-6 minutes of squash cooking time, watching them — they go from perfect to burnt embarrassingly fast.

  6. In a bowl, toss the arugula with lemon juice, olive oil, and a small pinch of salt. Let it sit for a minute; it softens slightly and loses that harsh raw bite.

  7. Divide the warm farro between four bowls. Pile on the arugula, then the roasted squash. Scatter the feta and pepitas over the top, finish with the chopped parsley, and eat immediately.

Notes

Delicata squash skin is totally edible and actually gets a little crispy in spots — that's the whole point of not peeling it. If you can't find delicata, butternut works but needs a few extra minutes and you will need to peel it. Farro can be cooked ahead and kept in the fridge for up to 4 days. The honey-garlic glaze is also excellent on carrots or sweet potato if you want to riff on this. Leftovers keep fine but store the components separately — dressed arugula wilts fast.
