I made these on a random Tuesday because I had half a sweet potato and a can of black beans and zero interest in washing a big pot. Forty-five minutes later my partner was asking if we could have them again Friday. That’s basically the whole origin story.

The sweet potato is the thing that makes this recipe worth caring about. Cut small and roasted hot, the cubes get these caramelized, slightly crispy edges that hold up against the beans and avocado instead of turning everything into mush. The cumin and smoked paprika do a lot of work without requiring a long ingredient list — this is genuinely a weeknight recipe, not a “weekend project disguised as a weeknight recipe.”

For the tortillas: toaster ovens are actually great at this. The circulating heat crisps them evenly on both sides in just a few minutes. You’ll want a toaster oven baking pan with a flat surface so the tortillas lie completely flat while they toast. If yours has a rack with big gaps, just set the tortillas directly on it — they’ll still work, just might curl slightly at the edges (which honestly looks fine). And if you’re in the market for an upgrade, a toaster oven with convection will cut your roasting time by a couple minutes and get the sweet potato even crispier.

Assemble right before eating. That’s the one non-negotiable. Tostadas have about a 4-minute window between “perfect” and “sad soggy cracker” once the toppings go on.

Roast the Sweet Potato

  1. Preheat your toaster oven to 425°F with the rack in the middle position.

  2. Toss the sweet potato cubes with 1½ tbsp olive oil, cumin, smoked paprika, garlic powder, and salt until evenly coated.

  3. Spread them in a single layer on the toaster oven baking pan — don't crowd them or they'll steam instead of roast. Roast for 18–20 minutes, flipping once halfway through, until the edges are browned and a little crispy. Set aside.

Crisp the Tortillas

  1. While the sweet potato finishes up, brush both sides of each corn tortilla lightly with olive oil.

  2. Working in batches (probably 3-4 at a time depending on your toaster oven), lay them flat on the baking pan and toast at 425°F for 5–6 minutes, flipping once, until they're golden and rigid. They crisp up more as they cool, so don't panic if they still feel a touch soft right out of the oven.

Warm the Beans

  1. In a small saucepan on the stovetop over medium heat, warm the olive oil, then add the drained black beans, cumin, chili powder, salt, and water. Stir and cook for about 3 minutes until heated through and slightly thickened. Mash roughly with a fork — you want some texture, not a smooth paste.

  2. No stovetop? Put the seasoned beans in a small oven-safe dish and warm them in the toaster oven at 350°F for 6–8 minutes. Works fine.

Assemble and Serve

  1. Spread a generous spoonful of black beans onto each tostada.

  2. Top with sweet potato cubes, a few avocado slices, pickled jalapeños, and a small dollop of sour cream or Greek yogurt.

  3. Scatter on the cilantro, hit everything with a squeeze of lime, and add a pinch of flaky salt. Serve immediately — tostadas do not like to wait.

Notes

Corn tortillas vary a lot by brand. Thinner ones get crispier faster; thicker ones take closer to 7 minutes. Keep an eye on them the first time you make this. // The sweet potato can be roasted up to 2 days ahead and refrigerated — just re-crisp for 4-5 minutes in the toaster oven before assembling. // If you can't find pickled jalapeños, a little hot sauce works, or just skip it if you're cooking for kids. // Leftovers: store each component separately. The assembled tostadas get soggy fast.
