So I had half a habanero left over from something else and a couple of sweet potatoes sitting on the counter looking sad, and this is what happened. Not exactly a planned recipe — more like a happy accident that I’ve now made at least six times. The mango glaze sounds fancier than it is. It’s mostly just mango jam from a jar.

The toaster oven is genuinely the right tool here. You get more direct heat on the sweet potatoes than a full-size oven, which means better caramelization on the edges without having to preheat for 20 minutes. I use a toaster oven baking sheet with a slight rim so the glaze doesn’t drip everywhere in round two — learned that the hard way. If your toaster oven has a convection setting, use it. Makes a real difference on the sweet potato texture.

The mango habanero glaze is the part that makes people ask for the recipe. Sweet and sticky and actually hot — not the fake “spicy” that just tastes like pepper flakes. If you’ve never cooked with habaneros, they’re small and orange and deceptively innocent-looking. Seed them and wash your hands immediately after. I’m not over-explaining this, I’m just telling you from experience. The soy sauce in the glaze sounds odd but it adds a savory depth that keeps it from being one-note.

For something like this recipe, even a basic model does the job. The lime crema takes about 45 seconds to make and it ties the whole thing together — don’t skip it.

Roast the Sweet Potatoes

  1. Preheat your toaster oven to 425°F on the convection or roast setting if you have it. If not, regular bake works — just add 2-3 extra minutes.

  2. Toss the sweet potato cubes with the olive oil, cumin, smoked paprika, garlic powder, and salt directly on a small rimmed baking sheet. Spread them into a single layer. Crowding is the enemy of crispy edges, so don't pile them up.

  3. Roast for 15 minutes, flipping once at the 8-minute mark, until the edges are caramelized and starting to get those golden-brown spots you want.

Make the Glaze and Finish the Filling

  1. While the sweet potatoes roast, stir together the mango jam, minced habanero, lime juice, and soy sauce in a small bowl. Taste it — it should be sweet, a little funky from the soy, and properly spicy.

  2. When the sweet potatoes come out, scatter the drained black beans over the top and drizzle the mango habanero glaze over everything. Toss gently right on the pan.

  3. Return the pan to the toaster oven for another 5-7 minutes until the glaze is bubbling and sticky and the beans have picked up some heat. Pull it out and let it cool for a couple minutes.

Lime Crema and Tortillas

  1. Mix the sour cream, lime juice, lime zest, and salt together. That's it. You can do this while the filling is in its second round of roasting.

  2. Warm your tortillas directly in the toaster oven — stack them wrapped in foil at 350°F for about 3 minutes, or just char them one at a time over a gas burner for 20 seconds per side. The charred method is faster and honestly tastier.

Assemble

  1. Spoon the sweet potato and black bean filling into the warm tortillas. Add a few slices of avocado, some red onion, a drizzle of lime crema, and a handful of cilantro. Serve with lime wedges on the side and eat immediately.

Notes

Heat level: One whole habanero makes this pretty spicy — legitimately hot, not just "bold." Cut it down to half, or swap in half a jalapeño if you want manageable warmth instead. Mango jam substitute: Fresh mango blended with a teaspoon of honey works too. The jam is just more reliable year-round. Storage: Store the filling separately from the tortillas and toppings. It keeps in the fridge for up to 3 days and reheats well in the toaster oven at 375°F for about 5 minutes. Make it vegan: Skip the sour cream and use coconut yogurt thinned with lime juice for the crema. Works surprisingly well.
