Preheat your toaster oven to 400°F. Line the baking pan with foil — cleanup is miserable without it.

Halve the bell peppers lengthwise through the stem. Pull out the seeds and any white membrane. Brush the outside of each half lightly with olive oil, then set them cut-side up on the prepared pan.

Sprinkle a little salt and the smoked paprika into each pepper half. Divide the crumbled goat cheese among the four halves, pushing it into the bottom to create a bit of a bed for the egg.

Carefully crack one egg into each pepper half directly on top of the goat cheese. Sprinkle with black pepper, fresh thyme, and the red pepper flakes if you're using them.

Slide the pan into the toaster oven and bake at 400°F for 15 to 18 minutes. At 15 minutes you'll get a fairly runny yolk; 18 minutes gives you something closer to jammy. Check at 14 minutes the first time you make these — every toaster oven runs a little differently.

Let the pepper cups rest on the pan for two minutes before moving them. They're surprisingly sturdy once set, but a thin spatula helps. Scatter fresh parsley over everything and serve immediately, with bread alongside if you like.
Notes
The peppers will release some liquid as they roast — that's totally normal and actually keeps the eggs from drying out around the edges. Don't skip the foil lining or you'll be scrubbing for a while. If your pepper halves are wobbly and won't sit flat, slice a very thin sliver off the rounded underside to stabilize them. Goat cheese can be swapped for feta if that's what you have — it works just as well and gets a little more golden around the edges. Leftovers reheat okay in the toaster oven at 325°F for about 6 minutes, though the yolk will firm up completely.
