I came up with this one on a weeknight when I had half a bag of frozen corn and two naans that needed to be used up. Wasn’t expecting much. That was a mistake — in a good way.
The move here is browning the butter before it goes on the flatbread. It sounds like an extra step and it is, technically, but it takes three minutes and the difference is pretty dramatic. You go from ‘this is fine’ to ‘wait, what did I put on this.’ The corn roasts up at high heat in the toaster oven until some of the edges char slightly, which pairs really well with the salty cotija and the acid from the pickled jalapeños. It’s got a nice balance — rich, salty, bright, a little spicy.
For this recipe you’ll want a toaster oven baking sheet small enough to fit your machine, since you’re roasting the corn separately before assembling. If you’ve been using the flimsy pan that came with your toaster oven, it might be worth grabbing something with a bit more heft — the corn chars better on a pan that actually conducts heat well. A decent compact toaster oven that can hit a true 425°F is pretty much all you need for this.
This makes two flatbreads, which feeds two people as a main or four as a solid appetizer. I usually eat both myself and do not regret it.
Toaster Oven Crispy Brown Butter Roasted Sweet Corn and Cotija Flatbread with Pickled Jalapeño and Lime
Charred sweet corn, nutty brown butter, salty cotija, and a hit of pickled jalapeño on a blistered flatbread. Ready in about 30 minutes in your toaster oven.

Preheat your toaster oven to 425°F on the bake or convection bake setting. If yours runs cool, go with convection — you want real heat here.

Brown the butter first. In a small saucepan or even a little skillet, melt the butter over medium heat on your stovetop. Keep swirling it until it smells nutty and turns a pale amber, about 3 minutes. Pull it off the heat immediately. (Yes, this step is worth it. It makes the whole flatbread taste way more interesting.)

Toss the corn kernels with 1 tablespoon of the olive oil, the smoked paprika, garlic powder, and salt on a small toaster oven baking sheet. Spread them out in a single layer.

Roast the corn for 12–14 minutes, until some of the kernels are starting to char at the edges. Shake the pan once halfway through. Set the corn aside.

Brush each flatbread with the remaining 1 tablespoon olive oil, then drizzle on the brown butter. Don't skimp — get it all the way to the edges.

Slide the flatbreads directly onto the toaster oven rack (or on the baking sheet if your rack spacing won't hold them). Bake for 5–6 minutes until the edges are crisp and the bottoms have some color.

Pull them out. Scatter the roasted corn over both flatbreads, then crumble the cotija generously on top. Return to the toaster oven for 2 more minutes just to warm the cheese.

Stir together the sour cream and lime juice — that's your drizzle. Spoon it over the hot flatbreads in uneven little streaks.

Top with pickled jalapeño slices and torn cilantro. Serve immediately with lime wedges. These do not hold well, so eat them while they're hot.
Notes
Fresh corn is best in summer, but honestly frozen works great here — just make sure it's totally dry before roasting or it steams instead of chars. Cotija can be swapped for crumbled feta if that's what you have. If you want more heat, add a pinch of cayenne to the corn before roasting. The brown butter step happens on the stovetop but it's just a few minutes and completely transforms the flavor — don't skip it. Flatbreads vary a lot in thickness; thinner ones will crisp faster so check them at 4 minutes.
