I made these for the first time on a Tuesday when I had half a sweet potato sitting in the fridge and a can of black beans I kept putting off using. No real plan, just sort of threw the filling together and hoped the toaster oven would do the rest. It did. Better than I expected, honestly.

The thing about taquitos is that most people think they need a deep fryer or at least a skillet full of oil to come out right. They don’t. A hot toaster oven — I use a reliable countertop toaster oven that runs pretty hot — gets corn tortillas genuinely crunchy, especially if you brush them lightly with oil and flip them halfway through. The sweet potato and black bean filling is smoky, a little creamy from the melted cheese, and holds together without being mushy.

You’ll want to warm the tortillas before rolling. This is the one step people skip and then wonder why everything cracked. A damp paper towel in the microwave for 45 seconds works fine. Once they’re pliable, rolling goes fast. Place them seam-side down on a toaster oven baking sheet lined with foil and you’re basically done with the hard part.

These are great as a quick weeknight dinner with some salsa and sour cream, or as a snack if you’re feeding a few people. I’ve also served them as an appetizer and they went fast. The filling takes about 5 minutes to mix, and the whole thing is on the table in half an hour.

Make the Filling

  1. In a medium bowl, mash the black beans roughly with a fork — you want some texture, not a smooth paste. Leave maybe a third of them whole.

  2. Stir in the mashed sweet potato, cumin, smoked paprika, garlic powder, salt, and pepper. Taste it. Adjust salt if needed. Fold in the cheese and jalapeños if using.

Warm the Tortillas

  1. This step matters a lot. Wrap the corn tortillas in a damp paper towel and microwave them for 45 seconds, or wrap them in foil and warm them in the toaster oven at 350°F for about 4 minutes. Cold tortillas crack when you roll them — don't skip this.

Assemble

  1. Preheat your toaster oven to 425°F. Line the toaster oven tray or a small baking sheet with foil and give it a light brush of oil.

  2. Spoon about 2 tablespoons of filling down the center of each tortilla. Roll it up snugly and place it seam-side down on the prepared tray. They should be touching or nearly touching — that actually helps them hold their shape.

  3. Brush the tops and sides of the taquitos lightly with oil. Don't soak them, just a thin coat.

Bake

  1. Bake at 425°F for 15 to 18 minutes, flipping once at the halfway mark. They're done when the tortillas are golden and the edges are visibly crispy. If they look pale at 15 minutes, give them 3 more — toaster ovens vary.

  2. Let them rest for 2 minutes before serving. They firm up a little as they cool and are much less likely to fall apart.

Serve

  1. Plate them with sour cream, salsa, fresh cilantro, and lime wedges on the side. A squeeze of lime over the top right before eating makes a real difference.

Notes

Corn tortillas work much better than flour here — they get genuinely crispy rather than just chewy. If yours are cracking before you even roll them, they need more warming time. The filling can be made a day ahead and refrigerated, which makes weeknight assembly pretty fast. Leftover taquitos reheat well at 375°F for 6-8 minutes — they come back crispier than you'd expect. I usually double the batch because they disappear fast.
