Toaster Oven Crispy Chili-Lime Roasted Chickpea and Avocado Tostadas with Pickled Red Onion

Crispy chili-lime chickpeas meet creamy avocado and tangy pickled onions on a crunchy tostada shell — a fast, satisfying vegetarian dinner your toaster oven handles beautifully
Jump to Recipe

These tostadas started as a desperate weeknight situation — one can of chickpeas, a sad avocado, and very little motivation. Now I make them on purpose. There’s something genuinely satisfying about pulling a pan of deeply golden, spiced chickpeas out of the toaster oven and watching people reach for them before the tostadas are even assembled.

The chickpeas are the whole point here. Roasting them at high heat in a toaster oven gives them this snappy, almost nut-like crunch that you don’t get from sautéing. If you’re using a toaster oven with convection, turn it on — the circulating air is what pushes them from good to genuinely crunchy. Just make sure they’re really dry before they go in. I cannot stress this enough.

The quick-pickled onion situation takes about 2 minutes of actual effort and does a lot of heavy lifting. The acidity cuts through the richness of the avocado and balances the smoky spice on the chickpeas. You can use a toaster oven baking sheet for the chickpeas and then the same pan for warming the tostada shells — minimal dishes, which is its own reward.

This is vegetarian and naturally dairy-free if you skip the sour cream drizzle (the Greek yogurt swap works great too). It feeds four people as a real dinner, not a snack, and you can have everything on the table in about 35 minutes.

Quick-Pickled Red Onion

Chili-Lime Chickpeas

Tostadas and Toppings

Instructions

Start the Pickled Onions

  1. Combine the sliced red onion, apple cider vinegar, sugar, and salt in a small bowl. Toss well, then press the onions down so they're mostly submerged. Set aside while you do everything else — even 20 minutes makes a real difference.

Roast the Chickpeas

  1. Preheat your toaster oven to 400°F on the bake or convection bake setting. If you have convection, use it — the chickpeas get noticeably crispier.

  2. The drying step is important. Spread the drained chickpeas onto a clean kitchen towel and pat them aggressively. Let them sit for 2-3 minutes. Any moisture left on them will steam instead of roast.

  3. Toss the dried chickpeas with olive oil, chili powder, smoked paprika, garlic powder, cayenne (if using), salt, and the lime zest. Spread in a single layer on your toaster oven pan — don't crowd them or they'll steam.

  4. Roast for 20-22 minutes, shaking the pan once halfway through, until they're deep golden and crunchy. Pull one out and let it cool for 10 seconds before tasting — they crisp up more as they cool. Squeeze half the lime over them right when they come out of the oven.

Warm the Tostada Shells

  1. Once the chickpeas are done, slide the tostada shells into the toaster oven — two at a time if needed — for just 2-3 minutes at 375°F. They should be hot and smell toasty. Don't walk away; they can burn fast.

Make the Smashed Avocado

  1. Scoop both avocados into a bowl. Add the lime juice and salt. Mash with a fork until it's roughly smooth — some chunks are fine, honestly preferable.

Assemble

  1. Spread a generous spoonful of mashed avocado onto each warm tostada shell. Pile on a good handful of crispy chickpeas, then top with pickled onions, fresh cilantro, and a small drizzle of sour cream or Greek yogurt if you're using it. Hit everything with hot sauce and eat immediately — the shells go soft if you wait.

Notes

Drying the chickpeas thoroughly is non-negotiable if you want crunch. I usually spread them on a towel and let them air-dry while the toaster oven preheats.

Leftover roasted chickpeas store well at room temperature in an open container (not sealed) for up to a day. They lose their crunch in the fridge.

The pickled onions keep in the fridge for up to a week and are good on basically everything else too.

If you only have a small toaster oven, roast the chickpeas in two batches rather than cramming them in — one crowded pan will ruin the texture.

No tostada shells? Brush corn tortillas lightly with oil and toast them directly on the toaster oven rack at 375°F for 5-6 minutes, flipping once.
