I’ve made some version of this probably a dozen times in the last few months, which is a good sign that it’s actually worth posting. It started because I had half a head of cauliflower and a can of chickpeas and no motivation to do anything complicated — and it turned into one of my favorite weeknight things. Cauliflower gets genuinely sweet and a little nutty when it roasts at high heat, and chickpeas at 425°F turn almost popcorn-like on the outside. Together, on top of garlicky labneh and honey, it works embarrassingly well.
The whole thing runs through a reliable toaster oven start to finish. You’re roasting at 425°F, which most toaster ovens handle fine — just make sure you preheat for a full 10 minutes because the little ones take longer to stabilize than you’d think. A small rimmed baking sheet is honestly the most important piece of equipment here. You need the lip to keep everything contained when you toss the vegetables halfway through.
Labneh is the thing I’d encourage you not to skip. It’s basically strained yogurt — really thick, a little sour, creamy without being heavy — and it holds up under warm toppings way better than regular cream cheese or ricotta would. Mix in some garlic and lemon and it tastes like something you’d get at a restaurant. If you genuinely can’t find it, thick full-fat Greek yogurt gets you close enough.
This is two flatbreads, which feeds two people as a main or four as a snacky starter. Scale it up if you need to, just roast in batches so the pan doesn’t get crowded.
Toaster Oven Crispy Sesame Honey Roasted Cauliflower and Chickpea Flatbread with Labneh and Chili Flakes
Caramelized cauliflower and crispy chickpeas piled onto flatbread with cool labneh and a drizzle of honey. Ready in about 30 minutes and genuinely better than it has any right to be.
Ingredients
Roasted Topping
Flatbread and Toppings
Instructions
-
Preheat your toaster oven to 425°F on the bake or roast setting. If yours runs cool, bump it to 435°F — cauliflower needs real heat to get color.
-
Toss the cauliflower florets and dried chickpeas together on a small rimmed baking sheet with the olive oil, sesame oil, cumin, paprika, salt, and pepper. Spread everything out in a single layer. Crowding is the enemy here, so use the largest pan your toaster oven fits.
-
Roast for 18-20 minutes, tossing once halfway through, until the cauliflower has some deep golden-brown edges and the chickpeas are starting to look crackly. They'll crisp up a bit more once off the heat.
-
While that roasts, stir together the labneh, grated garlic, and lemon juice in a small bowl. Season with a pinch of salt. That's your spread — keep it simple.
-
When the veggies are done, pull them off the pan and set aside. Now lay both flatbreads directly on the toaster oven rack (or on the baking sheet) and toast them for 2-3 minutes until the edges are just starting to crisp. You want them warm and slightly firm, not crackers.
-
Spread a generous layer of the labneh mixture onto each flatbread. Pile the roasted cauliflower and chickpeas on top.
-
Drizzle honey over each flatbread, then scatter sesame seeds, chili flakes, and parsley on top. Eat immediately — these do not wait well, and you don't want them to.
Notes
Drying the chickpeas thoroughly before roasting makes a real difference. Pat them with a paper towel and let them sit uncovered on the sheet for a few minutes before tossing with oil. If you're using a smaller toaster oven and can only fit one flatbread on the rack at a time, just toast them one after the other — takes an extra 3 minutes total, no big deal. Labneh is sold at most Middle Eastern grocery stores and a lot of regular grocery stores now; it's thicker and tangier than Greek yogurt and worth tracking down if you can. Leftovers are not really a thing here — the flatbreads get soggy fast. If you've got extra roasted cauliflower and chickpeas, store them separately and make fresh flatbreads the next day.
