Chicken thighs are honestly my favorite thing to cook in the air fryer toaster oven. I know that sounds boring, but hear me out. The combination of circulating hot air and a screaming-hot 400°F cook temp does something to the skin that the regular oven just can’t pull off without another 15 minutes of cooking time and a broil at the end. Here, the skin goes properly crispy — not just golden, actually crispy — while the meat underneath stays juicy and tender. I’ve made this on a Wednesday night with nothing but pantry spices and it felt like a real dinner.

The spice rub here is pretty flexible. Smoked paprika is the one I’d fight for — it gives the skin this gorgeous reddish-brown color and a subtle depth that plain paprika doesn’t quite match. The rest of the seasonings are adjustable; swap the oregano for thyme, add a little cumin, whatever. If you have good smoked paprika in your spice drawer, now’s the time to use it. The cayenne is optional — I usually add it, my kids prefer I don’t.

One thing worth mentioning: pat the chicken dry. I put it in the instructions but I’ll say it again here because it really does matter. Wet skin steams instead of crisps, and you’ll end up with something pale and soft that tastes fine but isn’t the same. Thirty seconds with paper towels is the move. If you’re new to air fryer cooking or you’re shopping for a combo appliance, a quality air fryer toaster oven with a true convection fan makes a noticeable difference on recipes like this one.

Serve these with literally anything — roasted vegetables, a simple salad, rice, whatever’s easy. The thighs reheat well too, which makes them excellent for meal prep. I usually make a double batch on Sunday.

  1. Pat the chicken thighs completely dry with paper towels — and I mean really dry. Moisture is the enemy of crispy skin, so don't rush this step.

  2. Mix together the smoked paprika, garlic powder, onion powder, oregano, salt, pepper, and cayenne (if using) in a small bowl.

  3. Rub the olive oil all over the chicken, then coat evenly with the spice mixture. Get under the skin a little if you can — just loosen it gently with your fingers and push some seasoning in there.

  4. Preheat your air fryer toaster oven to 400°F on the air fry setting for about 3 minutes.

  5. Place the chicken thighs skin-side up on the air fryer basket or rack. Don't crowd them — leave a little space between each piece so the hot air can circulate. Cook in batches if needed.

  6. Air fry at 400°F for 22 to 25 minutes, until the skin is deep golden and crispy and the internal temperature reads 165°F on an instant-read thermometer. No need to flip.

  7. Let the thighs rest for 5 minutes before serving. The juices will redistribute and the skin stays crispy. Serve as-is or with your favorite sides.

Notes

Bone-in thighs are genuinely more forgiving than chicken breast in the air fryer — they're harder to overcook and the skin crisps up better. If your thighs are on the smaller side (under 5 oz each), check them at 20 minutes. Boneless, skinless thighs will work too but cut the cook time to about 16-18 minutes and you'll skip the crispy skin benefit. For extra crispy results, let the seasoned thighs sit uncovered in the fridge for 30 minutes (or up to overnight) before cooking — the skin dries out even more and the payoff is real.
