But it might be the most practical piece of fish you can make on a Tuesday night — mild enough to please almost everyone, cheap, and genuinely forgiving in a way that fancier fish just aren’t. And in an air fryer toaster oven, it’s basically a different food than the sad baked cod of school cafeteria memory.

The air fry setting is doing a lot of work here. The circulating heat crisps up the panko crust in a way that a regular bake just can’t match — you get actual crunch on top while the interior stays moist and flaky. It takes about 12 minutes. That’s the whole cook time. Faster than ordering delivery, and you don’t have to deal with a giant Dutch oven or a stovetop splattered with oil.

The Dijon mustard layer is the move I kept seeing in French baked fish recipes and finally tried a few years ago.   1. Preheat your air fryer toaster oven to 400°F on the air fry setting. Let it run for at least 4-5 minutes — a properly preheated oven is what gets you that golden crust instead of a pale, steamed situation.

  2. Pat the cod fillets completely dry with paper towels. Don't skip this. Moisture is the enemy of a crispy crust, and cod holds onto a surprising amount of water.

  3. In a small bowl, mix the panko, parsley, lemon zest, 1½ tablespoons of the olive oil, garlic powder, smoked paprika, and a pinch of salt. Stir until the crumbs are evenly coated and clumping slightly.

  4. Brush the remaining 1½ tablespoons of olive oil over both sides of each fillet, then season with salt and pepper. Spread a thin layer of Dijon mustard across the top of each fillet — this is what makes the breadcrumbs actually stick instead of sliding off the moment you touch them.

  5. Press the panko mixture firmly onto the mustard-coated tops of the fillets. Really press it in. You want it packed, not just sprinkled.

  6. Place the fillets crumb-side up on the air fryer basket or tray. Don't crowd them. Cook at 400°F for 10 to 12 minutes, depending on thickness, until the crust is deep golden and the fish flakes easily when you press it gently with a fork. No need to flip.

  7. Let them rest for a minute or two before serving. Squeeze fresh lemon over the top right before eating.

Notes

Frozen cod works great here — just thaw it completely overnight in the fridge and dry it extra thoroughly before cooking. Thicker fillets (over 1.25 inches) may need an extra 2 minutes; thinner ones cook fast so check at 9 minutes. If your toaster oven runs hot, check at the 10-minute mark. You can swap the parsley for dill or chives if that's what you have. Leftovers reheat well at 375°F for 4-5 minutes — they don't get rubbery the way microwaved fish does.
