Some nights I don’t want to heat up my whole kitchen for a 20-minute dinner. That’s basically the entire reason I started cooking more in my toaster oven, and these honey sriracha cauliflower tacos are one of the best things to come out of that habit. The glaze is three ingredients — honey, sriracha, soy sauce — and it caramelizes on the cauliflower into something sticky and a little smoky and genuinely hard to stop eating off the pan before it even makes it into a tortilla.
Cauliflower gets a bad reputation as a “substitute” for things, but that’s not what’s happening here. It’s just cauliflower doing its own thing — absorbing the glaze, getting some char on the edges, turning almost meaty in texture by the time it comes out. A toaster oven with a convection setting is especially great for this because the circulating air helps the florets dry out a little and crisp up faster, but a standard toaster oven on roast mode works just fine too. Just don’t crowd the pan.
The avocado crema takes maybe three minutes to make and it’s the thing that pulls the whole taco together. Cool, rich, just enough lime. I usually make a little extra and use it as a dip situation with whatever chips are nearby. You’ll want a decent toaster oven baking sheet with a lip so the glaze doesn’t drip into the heating element — learned that the hard way.
This recipe feeds four people comfortably with two tacos each, and it comes together in under 35 minutes. It’s a solid weeknight dinner, good for people who eat vegetarian and people who don’t.
Toaster Oven Crispy Honey Sriracha Roasted Cauliflower Tacos with Avocado Crema
Caramelized cauliflower florets tossed in a sweet-spicy honey sriracha glaze, roasted until the edges char just enough, then stuffed into warm tortillas with a quick avocado crema. Ready in about 30 minutes and honestly better than most things I've made in my full-size oven.

Cauliflower
Avocado Crema

Instructions
Roast the Cauliflower
-
Preheat your toaster oven to 425°F on the roast or bake setting. Line the toaster oven tray with foil and give it a quick spray of cooking spray or brush with a little oil — the honey in the glaze will stick and burn without it.
-
In a large bowl, whisk together the olive oil, honey, sriracha, soy sauce, garlic powder, smoked paprika, and salt. Add the cauliflower florets and toss until every piece is coated. Really get in there.
-
Spread the cauliflower in a single layer on the prepared tray. Don't crowd it. If your toaster oven tray is on the smaller side, do two batches rather than piling everything on — crowded cauliflower steams instead of roasting and you'll end up sad.
-
Roast for 18 to 22 minutes, flipping once at the 12-minute mark. You're looking for dark, caramelized edges and a bit of char on the tips. The honey will make it look almost lacquered. That's what you want.
Make the Avocado Crema
-
While the cauliflower roasts, scoop the avocado into a blender or small food processor. Add the sour cream, lime juice, garlic, and salt. Blend until smooth. If it's too thick, add water a tablespoon at a time. Taste it. Adjust salt or lime.
-
No blender? Just mash everything together with a fork. It'll be chunkier but still totally delicious — more like a guacamole-sour cream hybrid, which isn't a bad thing.
Warm the Tortillas and Assemble
-
Wrap the tortillas in a slightly damp paper towel and microwave for 30 seconds, or warm them directly on the toaster oven rack for about 60 seconds after you pull the cauliflower out. They just need to be pliable.
-
Spread a generous spoonful of avocado crema on each tortilla. Top with a handful of roasted cauliflower, some shredded red cabbage, and cilantro if you're using it. Finish with cotija and a squeeze of lime. Eat immediately.
Notes
The glaze burns fast at high heat — keep an eye on things after the 15-minute mark if your toaster oven runs hot. I've made this with a mix of half cauliflower, half chickpeas and it's honestly excellent that way too, just adds a little more protein. Leftovers: store the roasted cauliflower and crema separately in the fridge. Reheat the cauliflower back in the toaster oven at 400°F for 5 minutes to revive some of the crispiness. The crema keeps for about 2 days before the avocado starts doing its thing. For a dairy-free version, swap sour cream for coconut yogurt or just leave the crema as pure mashed avocado seasoned with lime and salt.
