I started making these on nights when I didn’t want to heat up the big oven but still wanted something that felt like an actual dinner. Stuffed peppers have always been one of those things that look more involved than they are. Poblanos in particular are great for this — they’re big enough to hold a real amount of filling, and that slight earthiness plays so well with cumin and smoky black beans. Honestly, I’d take these over a lot of fussier meals.

You’ll need a toaster oven that can reach 400°F reliably and ideally has a broil setting for that last-minute cheese browning. A toaster oven with a broil setting makes a real difference on the cheese — it goes from melted to bubbly and golden in about two minutes flat. If yours doesn’t have broil, no big deal, just add 3-4 extra minutes of bake time.

The filling is deliberately simple. Black beans, rice, fire-roasted tomatoes, corn. I use fire-roasted specifically because regular diced tomatoes taste a little flat here by comparison — that small swap matters. You’re mixing everything cold and raw, then letting the oven do the work. Sharp cheddar on top, shredded yourself if you can bother, because it genuinely melts better than the bagged stuff. Use a toaster oven baking pan lined with foil and you’ll have basically no cleanup afterward.

This recipe makes 4 stuffed pepper halves, which feeds 2 people as a solid dinner or 4 as a side. I usually make the full batch and eat the leftovers for lunch the next day — they reheat surprisingly well.

  1. Preheat your toaster oven to 400°F on the bake setting. Line your toaster oven pan with foil — cleanup will thank you later.

  2. Halve the poblanos lengthwise and scoop out the seeds and membranes. Brush the cut sides lightly with olive oil and sprinkle with salt. Arrange them cut-side up on the lined pan.

  3. Roast the poblano halves for 10 minutes. They'll soften slightly and start to smell incredible. Pull them out and set aside — leave the oven on.

  4. While the peppers roast, stir together the black beans, rice, corn, drained fire-roasted tomatoes, cumin, smoked paprika, garlic powder, salt, and lime juice in a bowl. Taste it. Adjust salt if needed. The filling should be pretty well-seasoned on its own since the peppers are mild.

  5. Spoon the filling generously into each pepper half, mounding it up a bit — don't be shy. Top each one with a good heap of shredded cheddar.

  6. Return the pan to the toaster oven and bake for another 15–18 minutes, until the cheese is fully melted and starting to brown in spots on the edges. If your toaster oven has a broil function, hit it for the last 2 minutes to get a little extra color on top.

  7. Let them cool for a couple of minutes before serving. Top with cilantro and a dollop of sour cream if you like.

Notes

Day-old rice really is better here — freshly cooked rice makes the filling a bit wet. If you only have fresh, spread it on a plate for 10 minutes to dry out a little. Poblanos vary a lot in heat; most are very mild, but occasionally you'll get a spicy one. No real way to predict it. You can swap cheddar for Monterey Jack if that's what's in the fridge — it melts even smoother. Leftovers keep well in the fridge for 3 days; reheat in the toaster oven at 375°F for about 8 minutes.
