I started making this on nights when I wanted something filling but didn’t feel like dealing with a whole stovetop situation. Tempeh is one of those ingredients that genuinely rewards high heat — the edges get almost lacquered when you roast it with something sweet and sticky, and maple plus Dijon turns out to be a combination that’s way better than it has any right to be. The sweet potato soaks up the leftover glaze on the pan and gets these slightly caramelized edges. It’s a good dinner.
You don’t need a fancy setup for this. A reliable toaster oven and a basic sheet pan are honestly all it takes. I use a half-sheet that fits my countertop oven — if your model came with a shallow baking pan, that works too. Just line it with foil and you’ll have nearly zero cleanup.
The quick-pickled cabbage is the part I’d beg you not to skip. It takes about two minutes to throw together and the acidity cuts right through the sweetness of the glaze. Without it, the bowl is a little one-note. With it, every bite has something going on. I use red cabbage because the color goes from purple to that vivid magenta pink after sitting in vinegar, which is admittedly very satisfying to look at. Grab a toaster oven baking pan with a rim so the glaze doesn’t run off the edges — learned that the slightly sticky way.
This recipe makes four bowls, which means leftovers, which means lunch. The tempeh reheats well in the toaster oven. The cabbage stays tangy in the fridge for two days. It’s a weeknight recipe that actually works like a weeknight recipe should.
Toaster Oven Crispy Maple Dijon Roasted Tempeh and Sweet Potato Bowls with Pickled Cabbage
Sticky, savory maple-Dijon glazed tempeh roasted alongside cubed sweet potato, served over rice with quick pickled cabbage. Done in about 30 minutes, all in the toaster oven.
Ingredients
Maple Dijon Tempeh and Sweet Potato
Quick Pickled Cabbage
For Serving
Instructions
Pickle the Cabbage First
-
Combine the shredded red cabbage with apple cider vinegar, sugar, and salt in a medium bowl. Toss it really well, then set aside. It'll soften and turn bright pink while you do everything else — minimum 15 minutes is enough for a quick pickle like this.
Make the Glaze and Prep
-
Preheat your toaster oven to 400°F on the roast or bake setting.
-
Whisk together the maple syrup, Dijon, soy sauce, olive oil, smoked paprika, garlic powder, salt, and pepper in a large bowl. It smells pretty amazing already.
-
Add the sweet potato cubes to the bowl and toss to coat. Scoop them out onto one half of a foil-lined toaster oven pan, leaving room for the tempeh. Then add the tempeh slices to the same bowl, toss them in the remaining glaze, and lay them out on the other half of the pan. Don't stress if it's a bit crowded — they'll still roast fine.
Roast
-
Roast at 400°F for 12 minutes. Pull the pan out and flip the tempeh pieces. The sweet potatoes don't need flipping yet.
-
Roast another 8 to 10 minutes. You're looking for the tempeh to be deep golden and a little caramelized on the edges, and the sweet potato to be tender through when you poke it with a fork. If your toaster oven runs cool, give it the full 10 minutes.
Assemble the Bowls
-
Divide the rice between four bowls. Pile on the roasted sweet potato and tempeh, then add a generous heap of pickled cabbage on the side. Finish with scallions and sesame seeds. Eat immediately — though honestly I've eaten these cold out of the fridge the next day and they hold up well.
Notes
Tempeh can taste bitter straight out of the package to some people. If you're sensitive to that, steam it for 10 minutes before marinating. It makes a real difference. The glaze will look like too little at first — just trust it and toss thoroughly. Any leftover tempeh keeps in the fridge for up to 3 days; reheat it in the toaster oven at 375°F for 5 minutes to get the edges crispy again. Brown rice, quinoa, or even just some crusty bread work in place of white rice.
