Toaster Oven Crispy Maple Tahini Roasted Sweet Potato and Chickpea Bowls with Lemon Herb Yogurt

Crispy chickpeas and sticky-sweet roasted sweet potato come together in this easy toaster oven bowl that's filling, vegetarian, and genuinely crave-worthy
Jump to Recipe

I make some version of this bowl probably twice a week, which tells you everything about how easy it is. It started as a way to use up a sweet potato and a can of chickpeas before they became a problem, and somewhere along the way it turned into one of my actual favorite weeknight meals. The maple-tahini glaze sounds fancier than it is — you whisk it in the same bowl you toss everything in, so cleanup is minimal.

The thing that makes this work is high heat and not crowding the pan. If you’ve got a decent toaster oven baking sheet with low sides, the sweet potatoes caramelize instead of steam, and the chickpeas get this great crackly exterior that holds up for a few minutes after they come out of the oven. A rimmed sheet with high sides traps moisture and you end up with mush. Low sides, single layer, done.

The lemon herb yogurt is what ties it all together. It takes about 90 seconds to make and it’s genuinely what makes the bowl feel like a real meal instead of just grains and roasted vegetables. Fresh mint in here is non-negotiable in my opinion. Dried mint is not the same thing. If you don’t have fresh parsley either, a little fresh cilantro works too, though it changes the whole vibe.

If your toaster oven is on the older side and doesn’t hold temperature well, you might want to look at upgrading to a convection toaster oven — the circulating air makes a noticeable difference for roasting. That said, even a basic toaster oven will get this done fine. You just might need an extra few minutes on the chickpeas.

Instructions

Prep and Roast

  1. Preheat your toaster oven to 425°F on the convection or roast setting if you have it. This is important — you want real heat for caramelization, not just gentle baking.

  2. Pat the chickpeas dry with paper towels. Genuinely dry. Any moisture left on them is what makes them steam instead of crisp, and nobody wants soggy chickpeas.

  3. In a large bowl, whisk together the tahini, maple syrup, olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. It'll look thick. Add the sweet potato cubes and toss until every piece is coated.

  4. Spread the sweet potatoes in a single layer on your toaster oven baking sheet. Don't pile them up — give them room. Roast for 10 minutes.

  5. While the sweet potatoes roast, toss the chickpeas in whatever glaze is left in the bowl. If the bowl is basically clean, add a tiny drizzle of olive oil and a pinch of salt to the chickpeas directly.

  6. After 10 minutes, push the sweet potatoes to one side and add the chickpeas to the other side of the pan. Roast everything together for another 14 to 15 minutes, until the sweet potatoes have some caramelized edges and the chickpeas are golden and crackly. Keep an eye on things after the 20-minute mark — toaster ovens vary and the maple syrup can burn fast.

Make the Yogurt and Assemble

  1. While the pan is in the oven, stir together the yogurt, lemon juice, lemon zest, parsley, mint, garlic, and salt. Taste it. It should be bright and a little punchy. Set aside.

  2. To build the bowls: start with a scoop of warm grains, add a handful of spinach or arugula, then pile on the roasted sweet potatoes and chickpeas. Spoon the lemon herb yogurt over the top generously — don't be shy with it.

  3. Scatter pumpkin seeds over everything. Add a drizzle of extra tahini if you want, a pinch of red pepper flakes, and some extra fresh mint. Eat immediately while the chickpeas are still crispy.

Notes

The chickpeas will soften as they sit, so if you're meal prepping, store everything separately and add them right before serving. For a vegan version, swap the yogurt for a thick coconut yogurt or just drizzle straight tahini thinned with lemon juice and water. Farro is my personal favorite grain here — it has a nutty chew that works really well against the creamy yogurt. If your toaster oven runs hot (mine does), check the pan at 18 minutes total. The maple syrup in the glaze means things can go from perfect to scorched quickly.
