I made this for the first time on a cold Tuesday when I had half a Honeycrisp sitting on my counter and really good cheddar in the fridge and zero motivation to cook an actual meal. Thirty minutes later I was genuinely annoyed I hadn’t thought of this combination sooner. The apple goes in the toaster oven first — just five or six minutes to soften and caramelize around the edges — and that one step is what makes this sandwich. Raw apple in a grilled cheese slides around and steams and makes the bread soggy. Roasted apple basically becomes jammy and stays put.

You do need a toaster oven with enough interior space to lay two sandwiches flat, or you can do them one at a time. If you’re still working with a compact model, it’s worth grabbing a toaster oven with a convection setting — the air circulation helps the bread crisp up without burning before the cheese has time to melt. I’ve scorched more sandwiches than I care to admit by using straight broil. Bake at 400°F is the move.

For bread, I really do think sourdough is the right call here. Something with a little chew and tang cuts through the richness of the cheddar and the sweetness of the apple. Thin sandwich bread kind of collapses. A good thick-cut loaf from a bakery is ideal, but store-bought sourdough absolutely works. You’ll also want a small toaster oven baking sheet for the apple step — it just makes the process cleaner.

This one feeds two people as a proper lunch or a light dinner alongside a bowl of soup. I’ve also made a single sandwich for myself at 10pm and felt zero regret about it.

Caramelize the apples

  1. Preheat your toaster oven to 400°F on the bake setting. Line the toaster oven tray with foil or a small baking sheet — cleanup will thank you later.

  2. Spread the apple slices on the lined tray in a single layer. Dot with the 1 tablespoon of butter and sprinkle with brown sugar and that tiny pinch of cinnamon.

  3. Roast for 8-10 minutes until the edges are starting to brown and the slices are soft but not falling apart. Pull them out and let them sit for a minute. They'll be hot.

Assemble and toast

  1. Spread a thin smear of softened butter on one side of each bread slice — just enough to coat. Flip two slices over and spread a tiny bit of mustard on the unbuttered side if you're using it.

  2. Pile half the cheddar onto each mustard-side slice, lay the caramelized apple slices on top, then add the rest of the cheese over the apples. Cap with the remaining bread slices, buttered side facing out.

  3. Place the sandwiches directly on the toaster oven rack (or on the tray) and toast at 400°F for about 4 minutes on the first side. Carefully flip with a spatula and toast another 3-4 minutes until both sides are deep golden and the cheese is completely melted.

  4. Sprinkle with flaky salt and a crack of black pepper right when they come out. Slice and eat immediately — these do not hold well and honestly they're always gone within two minutes anyway.

Notes

Freshly grating the cheddar makes a real difference here — it melts faster and more evenly than the bagged stuff. Don't skip the apple caramelizing step; raw apple slices make the sandwich watery. If your toaster oven runs hot (mine does), check at the 3-minute mark on the second side. Gruyère is a great swap for cheddar if you have it, slightly nuttier. A very thin scrape of apple butter on the bread instead of mustard is also excellent.
