I’ve made a lot of open-faced cheese toasts in my life, and somehow this version — caramelized onions, sharp cheddar, a smear of seedy mustard on good bread — is the one I keep coming back to. It’s not flashy. It’s just really, really good.
The whole thing comes together in about 30 minutes, and most of that is just standing at the stove letting onions do their thing. If you haven’t done stovetop caramelized onions before, they’re one of those things that feel annoying the first time (they take longer than any recipe suggests) but become totally automatic once you’ve done it a few times. Low heat, patience, a little butter. That’s it.
For the actual toasting, a toaster oven with a broil setting is genuinely ideal here — you get that bubbly, slightly browned top that makes melted cheese actually exciting instead of just… melted. I use a small toaster oven baking sheet lined with foil so cleanup is basically nothing.
Serve these with a simple green salad, a bowl of tomato soup, or honestly nothing at all. They hold up on their own just fine.
Toaster Oven Crispy Cheddar and Caramelized Onion Tartines with Whole Grain Mustard
Thick slices of crusty bread loaded with jammy caramelized onions, sharp cheddar, and a swipe of whole grain mustard — toasted until bubbly and golden. Fast enough for a weeknight, good enough that you'll make them on purpose.

Caramelize the onions

Set a small skillet over medium-low heat on your stovetop. Add the butter and olive oil together — the oil keeps the butter from burning.

Add the sliced onions, salt, and sugar. Stir to coat, then let them cook low and slow, stirring every few minutes. Don't rush this. It takes 15-18 minutes for them to turn truly golden and sweet. If they start sticking, add a tiny splash of water and scrape up the bits.

Once they're deep amber and jammy-looking, add the balsamic vinegar. Stir for 30 seconds, then take the pan off the heat. Set aside.
Toast the bread and assemble

Preheat your toaster oven to 425°F on the broil or bake setting. Line a small baking sheet with foil for easy cleanup.

Lay the bread slices on the baking sheet. Slide them in for 2-3 minutes just to get them slightly crisp on top — this keeps the bottom from going soggy once you load everything on.

Pull the sheet out. Spread about half a tablespoon of whole grain mustard on each slice, going pretty close to the edges.

Divide the caramelized onions evenly across the four slices. Pile on the grated cheddar — don't be stingy. Scatter the thyme over the top and finish with a few cracks of black pepper.

Return to the toaster oven and bake at 425°F for 6-8 minutes, until the cheese is fully melted, bubbling, and starting to get a little brown at the edges. If you want more color on top, switch to broil for the last 60-90 seconds and watch it closely.

Let them sit for a minute before eating. Hot cheese will burn you. Learned that the hard way.
Notes
The onions are really the heart of this recipe, so don't cut that time short — undercooked onions are sharp and a little sad. You can caramelize a big batch ahead and keep them in the fridge for up to 5 days; they make everything better.
Cheese-wise, a mix of sharp cheddar and a little Gruyère is genuinely excellent if you have both open. Comté works too.
For bread, something with a firm crust holds up best. Soft sandwich bread will get floppy under the onions — not ideal.
These are also great with a fried or soft-boiled egg on top if you want to make it more of a proper meal.
