Cauliflower steaks have a bit of a reputation as the sad, reluctant vegetarian option — the thing you order when there’s nothing else on the menu. That’s a shame, because roasted properly they’re genuinely good. Cut thick, coated in cumin and smoked paprika, and blasted at high heat in a toaster oven, the cut surfaces caramelize and the edges get a little charred and almost crispy. It takes maybe 30 minutes start to finish.
I started making this on nights when I didn’t want to heat up my full oven for two people. A toaster oven with convection is genuinely great for cauliflower — the circulating heat pulls moisture out fast, which means better browning and none of that soggy, steamed texture that happens when the vegetable is crowded into too small a pan. High heat, plenty of space, and don’t rush the flip.
The lemon couscous is just a vehicle, honestly — simple and bright, done in five minutes while the cauliflower finishes. The tahini sauce is where a lot of the flavor is. Make it looser than you think, so it actually drizzles instead of sitting in a clump. And the pine nuts aren’t optional in my opinion. They add something toasty and a little rich that the dish really needs. I use a toaster oven baking pan with a low rim so air can circulate — a deep casserole dish will trap steam and you won’t get the same browning.
This is the kind of recipe you’ll make once because you had a head of cauliflower to use up and then keep making because it’s actually good.
Toaster Oven Crispy Lemon Tahini Roasted Cauliflower Steaks with Herbed Couscous and Toasted Pine Nuts
Thick cauliflower steaks get roasted at high heat until the edges char and caramelize, then land on fluffy lemon couscous with a drizzle of tahini sauce and a handful of toasted pine nuts. It's a proper dinner, not a side dish.
Ingredients
Cauliflower Steaks
Lemon Couscous
Tahini Sauce
Toppings
Instructions
Roast the Cauliflower
-
Preheat your toaster oven to 425°F on the bake or roast setting. If yours has a convection option, use it — you'll get better browning.
-
Slice the cauliflower into steaks about 3/4-inch thick, cutting straight down through the core so each piece holds together. The center of the head gives the best steaks. Don't stress if some florets fall off — just roast those too.
-
Stir together the olive oil, cumin, smoked paprika, garlic powder, salt, pepper, and chili flakes in a small bowl. Brush this mixture generously over both sides of each cauliflower steak.
-
Place the steaks on a lightly oiled toaster oven baking pan in a single layer. Slide into the oven and roast for 15 minutes, then carefully flip with a spatula and roast another 10-12 minutes, until the cut sides are deeply golden and the edges look a little charred. That's exactly what you want.
Toast the Pine Nuts
-
While the cauliflower roasts, put the pine nuts in a dry skillet over medium-low heat. Shake the pan every 30 seconds or so. They go from pale to burnt faster than you'd expect, so don't walk away. Pull them off the heat once they're golden and fragrant, maybe 3-4 minutes.
Make the Couscous
-
Put the couscous in a bowl with the olive oil, lemon zest, and salt. Pour the boiling water or broth right over it, stir once, then cover the bowl tightly with a plate or plastic wrap. Let it sit for 5 minutes exactly.
-
Uncover, fluff with a fork, then stir in the lemon juice, parsley, and mint. Taste it — it probably wants more salt.
Make the Tahini Sauce
-
Whisk together the tahini, lemon juice, garlic, and salt. It'll seize up and look weird at first. Add cold water one tablespoon at a time, whisking as you go, until it loosens into a smooth, pourable sauce. If it's too thick to drizzle, add a little more water.
Assemble and Serve
-
Spoon the lemon couscous onto plates. Set a cauliflower steak (or two if you're hungry) on top. Drizzle tahini sauce over everything — don't be shy with it. Scatter the toasted pine nuts on top, hit it with a pinch of flaky salt, and squeeze a little extra lemon over the whole thing. Eat immediately.
Notes
Cauliflower steak tip: the core is what holds everything together, so don't trim it out. Cut straight down through the middle of the head for the best steaks. The outer pieces will crumble into florets no matter what — just roast those alongside. Tahini sauce keeps in the fridge for about a week, and it's good on basically everything. If you're making this for four people, just double the cauliflower and sauce; the couscous recipe already scales up easily. Leftovers reheat really well in the toaster oven at 375°F for about 6-7 minutes.
